In this post, I share how to slice and cube chicken breasts, but each method also works for boneless skinless thighs.

If you are meal prepping or slicing and dicing chicken ahead of time to save time in the kitchen, you can cut the chicken up to 2 days beforehand to shave off a good 15 minutes from kitchen duty later in the week.

With that in mind, let’s get started!

Cutting chicken breast into cubes, strips, or butterflied halves is an efficient way to cook great-tasting chicken quickly.

You’ll notice most chicken breasts are thicker in the top portion while the bottom is thin and tapers off, like a teardrop. If you cook it while it’s uneven, the bottom tip will finish before the thicker part and dry the meat out.

If you cut the chicken into uniform shape and thickness, the pieces cook evenly, and the meat stays tender.

It also helps reduce the cooking time, which means you can get dinner on the table faster. It’s why recipes that use cut chicken such as fajitas, stir-fry, and pasta are popular weeknight dinners.

The steps below show you how to slice chicken against the grain. The thickness of each slice should be based on the recipe’s directions or your preference. Grab your chef’s knife, a plastic cutting board, and let’s do this.

If you want slivers of chicken breast to toss into a stir-fry, you cut the chicken breast as you would for slices, but then you take those same slices, stack a few at a time, and slice them lengthwise.

Stack only as many slices on top of one another as you feel comfortable slicing.

Only stack as many slices on top of each other as you feel comfortable slicing. The goal is to produce relatively uniform matchstick-lengths of chicken breast.

If you’re making a recipe that calls for diced chicken breast, as in my Sichuan kung pao chicken, you’ll want to start by slicing the chicken into wider strips.

For cubes of chicken breast, start by slicing the breast slightly against the grain into large slices.

Then cut each of those wider strips crosswise into cubes. If you want to cut up smaller cubes, take each of the wider strips and slice it in half lengthwise, then cut the resulting strips crosswise.
