How To: Sauce And Serve Pasta

Behind every great pasta dinner is a great sauce. It’s not just the flavor of a sauce that matters. It matters when and how the sauce and pasta come together. Properly saucing your pasta is the difference between cooking an authentic Italian meal and simply preparing Italian ingredients. This guide will teach you the right way to sauce and serve pasta.
Cooking pasta and sauce might seem like a no-brainer. Who doesn’t know how to prepare and serve up a classic plate of pasta and sauce? You might be surprised.

Cook sauce first. Keep the sauce on a low simmer until pasta is ready. Your pasta shouldn’t wait for your sauce to cook. Waiting will lead to overcooked, overly starchy pasta.
Go easy on the sauce. Authentic Italian pasta sauce servings are light. Italian dishes do not swim in sauce. An average ratio of tomato sauce to pasta is 1 1/2 cups of sauce to 1 pound of pasta.
For oil-based sauces, use 1 cup per 1 pound of pasta. Go even lighter with creamy, rich sauces. Typically, we like the ratio of one jar of our sauce to 1 pound (or package) of our pasta.
Don’t dump that pasta water. That hot starchy water is an asset to your pasta dishes. Reserve about 1 cup of pasta cooking water before draining your noodles.
Add the reserved pasta water to the saucepan just after the hot pasta is added to the sauce. When adding this hot pasta water, be sure to do it a little bit at a time until you get the desired consistency.
        •    For thicker sauces, use pasta water to make the consistency thinner and lighter.    •    For oil-based sauces, use pasta water as a binder to help sauces coat the noodles.
Do not rinse your pasta. The only time you should rinse your pasta in cold water is when you plan on creating a cold pasta dish or pasta salad. Rinsing the pasta will cool it down quickly and prevent the noodles from sticking. Rinsing pasta removes the starches necessary for the sauce to stick. Likewise, never add oil to the cooked pasta.
Keep it together. Cook pasta and sauce together for 2 minutes to marry their flavors. The added starchy water will also help to develop flavors and coat each noodle—transfer pasta to a warm serving bowl to dish out.

How Much Sauce to Use for Pasta?

What is the Correct Ratio of Sauce to Pasta?

Many people wonder how much sauce to use when cooking pasta.

For tomato-based sauces, a good rule of thumb to follow is to use one jar of 24-ounce pasta sauce for every 16-ounce package of pasta. When calculating how much sauce for pasta per person, generally about 2 to 4 ounces (1/4 to 1/2 cup) of sauce for each 2 ounce (about 1 cup cooked) serving of pasta would be needed.

For pesto sauces, use about one jar of 5.6-ounce sauce for a 16-ounce package of pasta. The amount of pesto sauce needed for pasta per person would be about .75 ounces of sauce for each 2 ounce (about 1 cup cooked) serving of pasta.

Wondering How Much Pasta Per Person? Here’s The Definitive Guide To Pasta And Sauce Amounts

I recently had a friend ask me how much pasta per person I make. I started to think about how I never made the right amount of either ingredient. Either there is enough pasta to feed an army, or it’s barely enough for my family of four. As for the sauce, it’s sometimes swimming in marinara, and other times it’s tough to get the bottom of the bowl coated. It seems so simple, but I never really took the time to get it right.

I decided to answer the question of how much pasta per person is needed. Also, how much sauce do we need? Throughout the research, I learned so much, and boy, was I doing it all wrong!

Want the perfect ratio of pasta to the sauce along with all of the other ins and outs?

Let’s go to The Chalkboard.

Why Do You Need To Measure Pasta?

Technically, you don’t need to measure pasta. You throw a bunch into salted, boiling water and cook. But if you are trying to reduce your food waste or make sure you have the proper amount, it’s best to measure. Let’s learn how.

How Much Pasta Per Person

According to the USDA, one serving of pasta is one ounce. Regardless of shape, most kinds of pasta are in 16 oz boxes which, according to these standards, would serve 16 people. In reality, a one-ounce portion is a bit small. Most manufacturers go by a more realistic 2-ounce serving size, that is ¼ cup.

Remember that refers to a SERVING size. If you have hearty eaters that will have multiple helpings of your wonderful dinner, plan accordingly.

One cup per four people should yield a fair amount. To be honest, in my house, that’s not enough. We are reasonable eaters, and I always do 1.5 cups. I find that to be the perfect amount if my crew is pretty hungry. Plus, if there are any leftovers, it’s easy to repurpose.

Since pasta comes in all different shapes and sizes, the amount of cooked pasta varies greatly. Barilla has a great chart that breaks it all down. Noodles usually double in size after being cooked.

How To Measure Spaghetti/How Much Spaghetti Per Person

The serving size for spaghetti is two ounces. An easy way to get the right amount is to take your forefinger and bend it to rest on your thumb, creating a circle about the size of a quarter. The amount that fits there is the approximate amount of spaghetti per person.

One box has eight servings.

How Much Sauce For One Pound Of Pasta?

So we’ve cooked the perfect amount of pasta, now what do we do about the sauce? Italian dishes are not drowning in sauces. An average tomato sauce to pasta ratio is 1 1/2 cups of sauce to 1 pound of pasta. For oil-based sauces like pesto, use 1 cup per 1 pound of pasta. Go even lighter with creamy, rich sauces like Alfredo.

Do You Sauce Pasta Or Pasta Sauce?

It’s like the chicken and egg situation; which comes first? The simple answer is that you add pasta to a warmed sauce.

Here’s the proper way to combine pasta and sauce.

Cook pasta according to directions. Heat the sauce in a large pan for a minute or two until warm. A high-sided frying pan works well. Drain the pasta, reserving one ladle full of pasta water (approximately ½ cup.) Starch from the cooking water helps the sauce adhere to the pasta. Put the pasta into the warmed sauce and add a tiny bit of fat (butter, cream, etc.). Allow the fat to melt, and then add some reserved pasta water. Start with ¼ cup. Mix well.
