Diễm chia sẻ cách làm bánh bao chỉ, một món bánh của người Hoa. Bánh là phần vỏ nếp dẻo mềm, bên trong là nhân đậu phộng hoặc mè vừa thơm, béo ngọt ngọt rất ngon. Công thức này Diễm học từ chị Quyên ( Bếp Nhà Tố Quyên Facebook Phong Xuan Trinh ). Vỏ bánh rất mềm dẻo, đúng vị như ngày xưa Diễm từng ăn. Vỏ bánh, nếu mình dùng tinh bột mì, sẻ mềm và có độ dai, nếu dùng tinh bột bắp, bánh mềm và dai giòn nhẹ. Mình cùng vào bếp làm món bánh bao chỉ với Diễm nhé!
Nguyên liệu / Ingredients: ( 12 bánh / 12 cakes )
◽️Nhân / Filling
150g = 1 cúp đậu phộng / 150g = 1 cup peanut
50g = 3 mc + 1 mcf đường / 50g = 3 tbsp + 1 tsp sugar
1/3 mcf ~ 2g muối / 1/3 tsp ~ 2g salt
◽️ Vỏ bánh / Dough
200g = 1 + 2/3 cúp bột nếp / 200g = 1 + 2/3 cups glutinous flour
35g = 1/4 cúp tinh bột mì bột tàn mì / 35g = 1/4 cup wheat starch
( Hoặc tinh bột bắp / Or Corn starch )
40g = 2+2/3 mc đường / 40g = 2+2/3 tbsp sugar
300ml = 1+1/4 cúp nước / 300ml = 1+1/4 cups water
1 mcf tinh chất vani / 1 tsp vanilla extract
15g ~ 1 mc dầu / 15g ~ 1 tbsp vegetable oil
50g = 1/2 cúp bột gạo / 50g = 1/2 cup rice flour
2 cái lá dứa / 2 pandan leaves

How to achieve open crumb for basic country sourdough. Steps from autolyse to baking, showing every details and techniques.
Basic country sourdough.

240g Bread flour
60g Wholewheat
230g water
60g sourdough starter
6g salt
hydration adjust accordingly to flour used.
dough bulk proof at 2526C for 5hr
final proof 1520mins at 2526C
retard overnight in fridge at 4C or below.

1/4 teaspoon Diamond Crystal kosher salt

Allpurpose flour, for rolling out
Demerara sugar, for sprinkling the top
