Hi. I’m the Answer Wall. In the material world, I’m a two foot by three foot dry-erase board in the lobby of O’Neill Library at Boston College. In the online world, I live in this blog. You might say I have multiple manifestations. Like Apollo or Saraswati or Serapis. Or, if you aren’t into deities of knowledge, like a ghost in the machine.

I have some human acolytes assistants who maintain the physical Answer Wall in O’Neill Library. They take pictures of the questions you post there, and give them to me. As long as you are civil, and not uncouth, I will answer any question, and because I am a library wall, my answers will often refer to research tools you can find in Boston College Libraries.

Potatoes are delicious, there’s no denying it! They are the ultimate comfort food that reminds you of home. What’s more American than a side of spuds?! But it’s not just Americans who love this starchy vegetable but the rest of the globe, too.The top consumers are China, Russia, India, and the U.S. China alone consumed 47,594,193 tons in 2005. Their popularity alone proves how delicious they are regardless of who you are or where you’re from.

Potatoes are an extremely versatile food that takes many different shapes and complements any meal, culture, or time. Our favorite ways to serve them up at Kate’s Kitchen are breakfast potatoes in the morning and a pile of french fries in the afternoon. Have them mashed, scalloped, boiled, baked, roasted or fried. Over the years, the potato has earned a bad reputation for being unhealthy and causing weight gain but in reality the opposite is true. They are high in vitamins and minerals like potassium, calcium, iron, magnesium, vitamin A and vitamin C. They help with weight loss by being low in calories, high in fiber and their lack of fat. Potatoes contain lots of antioxidants to help fight diseases. Many civilizations, such as Ireland and China, lived off of potatoes and nothing else due to its high nutrition properties. As the most nutrient-rich vegetable on Earth it contains all of the necessary nutrients for survival.

4. They Won’t Break The Bank

In the United States, potatoes cost an average of 31 cents per pound! A study found that they have the second highest nutritional value per penny making them a great choice when you are wanting to stretch your dollar. They are the most cost effective way to get in all your nutrients.

5. They Have A Long Shelf Life

We know that potatoes are cheap to buy and can be made into just about anything but even better is that they will last in your kitchen for what feels like forever. The average shelf life is three to four months. This will vary slightly on the type of potato and where you store them. TIP: You can store them in your freezer for up to eight months!

The potato hardly needs a reason to be praised, but since we think that these little spuds are often taken for granted, here is a small compilation of interesting facts that might make you appreciate your next meal accompaniment.

Potatoes take the cake as the first food to ever be grown in space – Thanks to The University of Wisconsin, Madison and NASA, in 1995 the potato became the first food to ever be successfully grown in outer space (and you thought that the potatoes grown in the move Martian were creative licence!). Potato blossoms were once a fad – The French Aristocracy popularised the potato fad when King Louis XVI and Marie Antoinette accessorised with the dainty little white blossoms. During this time period, the blossoms of the potato plants were thought to be so appealing that they were used as a persuasive measure to sell the crop. Potato consumption is old news, like really old – Evidence suggests that potato consumption dates back over 6,000 years ago to the ancient mountains of Peru. Potatoes are medicinal – In Inca culture potatoes are used for medicinal purposes to heal broken bones, sunburn, frostbite, acne, sore throat, as well as minor aches and pains. Potatoes can be hydrating – The composition of potatoes is 80% water and only 20% solid. Potatoes won’t break your diet – The average potato only has 100 calories. Fibre – Potatoes are said to have double the amount of fibre in them than rice and 20% more fibre than pasta. Carbohydrates – Potatoes have 25% less the amount of carbs in them than that of pasta and 50% less carbs than rice. Fat free – Potatoes are said to be virtually fat free. Vitamin B – Potatoes are packed with double the amount of B-vitamins of that in pasta and 6 times more than what is in rice. Potatoes account for 10% of the human body’s daily value of b-vitamins. Vitamin C – Potatoes have 60% more vitamin C in them than blueberries. Rice and pasta have 0% vitamin C. Potatoes have 30% the suggested daily value of vitamin C. Potassium – Potatoes have 80% more potassium than bananas! Potatoes account for 25% of the recommended daily intake of potassium.

Potatoes are good for you. There is no way around that. The amount of vitamins that are packed into these little spuds is immense! The range of vitamins in potatoes spans from potassium, to vitamin C, vitamin B, folate and many more.
