Crockpot Chicken Tacos

Yesterday I made Shredded Salsa Chicken in the Crockpot. This really is one of the easiest things you can ever do. It’s that simple, takes 2 minutes of “work” and is healthy. Boom.

(In the picture above I added carrots – I don’t usually do this but thought I’d change it up. It worked well as they were boiled and I mashed them up with the salsa and chicken to give it a pinch of vitamins adds, but didn’t really taste different.)

I usually use four chicken breasts for this recipe. Since my pack of chickens came with six, I baked the other two to eat on top of salads for lunch. It makes me feel like a meal prep superstar.

Once the chicken was done in the crockpot, I shredded it.

Another great thing about this method of cooking chicken is that it’s super easy to shred AND makes a lot of food. You can use this shredded chicken in tacos, burritos, enchiladas, on salads, in a bowl with rice and beans…

I made tacos with it last night and I’ll probably make enchiladas tonight.
