For example, products made with honey, maple syrup, coconut or turbinado sugar, high fructose corn syrup, corn syrup, and dextrose are considered healthier choices. Do not be fooled. It’s definitely not your body! Too much sugar is too much, no matter what the source.

It depends on how quickly the sugar is absorbed. For example, because of the fiber content, your body spends more time digesting an apple, so the natural sugars are absorbed more slowly. On the other hand, the added sugar in soda hits your system like a sugar bomb all at once. All that extra sugar gets converted to calories much more quickly. Not so good for your system!

If you’re not looking for calories, your best option might be a plant-based sweetener like stevia or monk fruit. These sweeteners are “generally recognized as safe” based on published research, a conclusion reviewed by the Food and Drug Administration (FDA).

Since the difference between volume and mass is an important difference, let’s explore it further. Let’s say we are measuring the volume and mass of water. Water has a density (mass/volume) of 1 g/mL. Based on other factors, such as the temperature of the water, this density can vary, but for the sake of simplicity we’ll assume that its density is always 1 g/mL.

In other words, 1 milliliter of water contains 1 gram of water. Likewise, 1 ml of water (volume) corresponds to 1 g of water (mass). So 1 g water = 1 ml water.

Since most butter sticks come with measurements printed on the outside of the package, it should be fairly easy to decipher how much you need. A stick of butter is labeled with teaspoons and tablespoons, and also shows the tablespoon-to-cup equivalents. The front of the box also says 4 oz. and 113 g net weight.

However, if you’re using softened butter, you won’t have these instructions. To measure softened butter, scoop and squeeze into a measuring spoon or dry measuring cup and press down with a spatula to remove any air. Then level the top with the spatula or the flat side of a knife.

You might have stick butter, but only leftover odd-shaped pieces. Don’t worry – there’s an easy way to measure out the amount you need. Take a two-cup measuring cup and fill it with water to the one-cup mark. Then start submerging the butter pieces, nudging them down if necessary, until the water level reaches the amount of butter required in your recipe. For example, if you need 1/4 cup (4 tablespoons) of butter, add chunks of butter until the water level is 1 1/4 cups. Drain off the water and you will have the amount of butter you need.

Should I measure sugar by weight or volume?

Many experts insist that dry ingredients like sugar should be measured by weight rather than volume, especially when used in baking.

This is because the density of different sugars varies slightly, so volume measurements are likely to give an incorrect amount of ingredients. If you use a cup or tablespoon, the amount the sugar compresses and falls above or below the measurement line will change the actual amount.

For this reason, most experts suggest using a food scale when cooking instead of using a cup, tablespoon, or other volume measuring devices.
