Do you sometimes wake up in the morning and find that your thoughts are immediately consumed with food?

i know i do!

It’s usually a bowl of cereal or oatmeal for breakfast, but lately I’ve been jumping out of bed and baking up a storm. Nothing too complicated mind you!

Considering my body clock is everywhere, early morning for me can be anywhere from 4am to 6am.

It was a recent Saturday morning when I was surfing the internet with tired eyes for something to enjoy with a few cups of freshly brewed coffee.

I didn’t feel like muffins. I think I’ve had enough of this to last a lifetime.

I was behind something “yeasty” with a little “Pep!” here. And there I saw it.

Pan de leche.

I assumed it was a South American recipe based on the title.

Further research revealed that Pan de Leche is actually Filipino. Another website claimed it was in Spanish. is it mexican

I’m sure there is an explanation out there and if anyone can help me unravel this milk bread mystery I’d be grateful!

Secrets aside, these little loaves hit the spot. The butter and milk make them almost like brioche.

Brushed with more (erm!) butter and some tangerine marmalade, I devoured them greedily as the sun rose. Be careful with the dough as it can be quite sticky.

The trick is to cover your hands in oil as you shape.

1 cup milk, blanched and cooled

1 ounce active yeast

4 cups white flour

1/2 pound butter or margarine

1/2 cup sugar

1/2 tablespoon salt

4 eggs, beaten

1 teaspoon vanilla extract

Preheat oven to 375*F.

In a bowl, whisk together the milk, yeast, and 2 cups of flour to form a soft batter. Place in a large greased bowl, cover with a towel and set aside in a warm place. Let rise to double in size, about 30-40 minutes. This forms the sponge.

In a mixer, cream together the butter, 1/2 cup sugar, and salt until well combined. Mix in the 4 eggs and the vanilla extract.

When the sponge cake has risen, add it to the butter and egg mixture and mix well to break it up.

Add the remaining 2 cups of flour. The dough should feel smooth and elastic. Add more flour or milk to achieve this consistency.

Place the dough on a greased baking sheet. Using a rolling pin, form the dough into a 1cm-thick rectangle and flatten. Let rise again for 30-40 minutes. In a bowl, mix the ingredients for the egg wash.

Just before baking, lightly score the dough with a knife to create a checkerboard pattern of 1 1/2″ x 3″ rectangles. Brush the top of the dough with the egg wash.

Bake for 35-40 minutes or until golden brown.

Another type of Filipino favorite bun is pan de leche. It’s a soft bun with a sweet and creamy milk filling. The dough consists of flour, milk, butter, egg and yeast. In this recipe I used the rapid riser yeast instead of the active dry yeast. This is to reduce waiting time in the kitchen while the dough is rising and resting. I also used a stand mixer to make kneading the dough much easier. Using this method, I was able to make 20 pieces of medium buns per batch, or 24 small pieces. You can repeat the process and bake two to three batches of bread if you want to bake more rolls with the same recipe. If you want to focus more on the dough-making process, you can prepare the sweetened milk-cream filling ahead of time and set aside.
