“In the normal freezing process, when ice crystals form, they usually damage and destroy membranes and important large biomolecules, which prevents us from determining their structure and function when they interact with lipid membranes,” says Mezzenga.

But not with the new mesophase, which is nondestructive and preserves such molecules in their pristine state and in the presence of life’s other key building block, lipids. “Our research paves the way for future projects to find out how proteins are preserved in their original form and how they interact with lipid membranes at very low temperatures,” says the ETH professor.

Calling this a recipe is a bit of a stretch. Throwing some marshmallows on top of melted chocolate, banging a Smartie on it, and calling it Cordon Beau Cooking would easily take the mick. But these top hats represent a part of my childhood. A good part. A warm fuzzy part. And having arrived south of Hadrian’s Wall as an adult, I’ve come to realize that they didn’t occur in many other people’s childhoods. What a pity.

I produced these for one of my group’s parties (there weren’t many parties but there are a lot of kids so I’d have a hard time pinpointing the exact moment). Talking to the adults present, it turned out that so far only the Scots and Northern Irish among us had come across top hats. You are clearly a Gaelic creation?

So it would only be fair to share love with others. And since they’re so simple, yet so happy, I feel compelled to post them on the blog.

On this occasion I made them for a bake sale at school. The Children in Need theme is spotty, and by god, my top hats fit the briefing perfectly (aside from the whole lack of cake slices, but meh). These are perfect for bake sales as they don’t require a lot of effort, you can make hundreds pretty quickly if you have to and they’re a hit.

ingredients

Makes about 23-24 top hats depending on how many marshmallows are in the packet

200 g bar of milk chocolate

1 bag of marshmallows

1 tube of Smarties

Mini cupcake liners

1. Spread out your cupcake liners on a tray.

2. Place the chocolate in a microwave-safe bowl and melt (in 30-second bursts, stirring after each burst).

3. Fill each box with a teaspoon of chocolate. Don’t overfill, a little goes a long way.

This is going to be a bit messy. But heh, we’re living on the edge. Leave enough chocolate in the bowl to dip your smarties in.

4. Place a marshmallow on each box of chocolate. Now that’s important: Place the marshmallows, smaller end down. Thus the end result looks (somewhat) like a cylinder. Ah ha, it all makes sense now!

5. Dip a smartie in the remaining chocolate, enough to cover the bottom, then place on top of the marshmallow.

6. Allow the top hats to set before serving. DO NOT refrigerate as the Smarties will lose their colour.

Et voila! Cylinder. If you can’t craft these, there’s probably something wrong with you.

Try not to eat them all before giving them to the kids/cake sale. Or just eat them all. I made extra so a few wouldn’t be missing. There’s just something about a marshmallow sitting on a bed of chocolate with a smartie on top to add a bit of crunch that really hits the spot.
