STELLATO
VERMENTINO DI SARDEGNA
Denominazione Di Origine Controllata
Grapes: Vermentino 100%.
Vineyards and training method: “Is Crabilis” (Ussana), low espalier.
Age of the vineyard: 60 years.
Yield: 65 quintals/hectare.
Soil type: Sandy and clayey-calcareous rich in pebbles, medium hill, 150/180 m. above sea level.
Fermentation, Maturation, Ageing: The must obtained by the soft pressing of the grapes after a first clean and the addition of yeasts selected in our own vineyards, ferments in stainless steel vats at a controlled temperature of 12° C. Having completed fermentation, the wine remains in contact with the fine lees for about five months at the end of which, after cleaning, it is bottled.
Tasting: Intense straw yellow colour with greenish tinges, brilliant. Intense, lingering aroma with vegetable and floral fragrances of maquis and summer fruits. Pleasant nose-palate harmony, warm and full of good depth and perky acidity, balanced.
Matching and service: Seafood in general, shell fish and crustaceans; delicate fish also flavoured with light sauces, dry and liquid soups with not excessively spicy seasonings. Serve at 12° C, uncorking the bottle at the moment of pouring.

It’s been almost ten years since, at Pala, we decided to put together the classic I Fiori with a new Vermentino.
He had to break the mold, to compete with the minerality of the north but have more depth and Mediterranean aroma, being an outsider anyway… and so we thought the name.
Stellato, not only the sky, but as well as those restaurants that respect tradition and daring to innovate and become Stellato, precisely.

Pala Stellato Vermentino 2020
These thirty-year-old vines from the single “Is Crabilis” vineyard are low espalier trained. The soils are sand and clay/limestone rich in pebbles situated on hillsides 150 to 180 metres above sea level.
The juice was pressed and clarified, then fermented in stainless steel at 12ºC. The wine remained in contact with its fine lees for three months but saw no oak or malolactic, and was then bottled early to preserve freshness.

The Pala family began their adventure with wine in 1950 amongst the rolling, vine-covered hills of Serdiana, an idyllic village located in southern Sardinia. With mild winters and warm, dry summers, this part of Italy’s second largest island is ideal for grape growing, with the traditional varietals finding a special home here. Under the guidance of Mario Pala as of 1995, the winery continues to be family-owned. The value of tradition and the innovation of modern techniques are both incorporated into the winemaking process at Pala. Pala owns six different vineyard areas with a total of 68 hectares currently under vine. Each vineyard is planted with varietals that are chosen according to the microclimate and soil type of the individual site. Pala practices organic farming in the vineyards
