Organ meats like beef kidney aren’t popular in the United States, but they can be a tender and flavorful cut if prepared correctly. Unlike lamb or veal kidneys, beef kidneys are large and tough and require long braising over low, moist heat to become soft.

Add chopped vegetables to the braising liquid along with the kidneys to make a stew that can be spooned over rice or mashed potatoes, or serve cooked beef kidneys with crusty whole-wheat bread to mop up the sauce.
According to the USDA, beef kidneys are a good source of protein, with 23.2 grams per 3 ounces serving. However, they are also high in purines, or compounds that the body breaks down into uric acid.

Add a small amount of plain vinegar or lemon juice and a pinch of salt. Put the beef kidney pieces into the water and allow them to soak for two hours. Step 5: Drain the Soaking Water Drain the kidney chunks in a colander, discarding all of the soaking water and the liquid that comes out of the meat. Step 6: Heat Some Liquids Pour water and your choice of wine into a large saucepan. Plan on 1 cup of wine and about 1 3/4 cups water for every 3 to 3 1/2 pounds of raw beef kidneys. Bring the liquid to a boil. Step 7: Add Meat and Veggies Stir the kidneys into the liquid along with chopped vegetables such as mushrooms or potatoes, if desired, and seasonings like garlic or thyme. Allow the mixture to boil, then reduce the heat to low. Step 8: Cook Until Tender Put the pan’s lid in place. NO, it doesn’t taste like chicken! Not everything tastes like chicken. When it is cooked properly (not overcooked), the kidney is tender and the texture is nice. It’s not like the liver, which I like too, that can taste a bit sandy (I still like it!). The kidney is nice! seriously! But, you need to know how to clean and prepare it properly or you will not be happy with the result (the smell of urine? ring any bell?)

There’s no harm in eating it, unless you have a specific health condition. I think it’s the mental part that stops people from eating innards like a kidney (It’s GROSS!). I don’t find it gross, so, it’s really subjective!

HOW TO PICK FRESH KIDNEY?
Pig’s kidneys are usually sold in whole fresh in Asian grocery stores. Their shelf-life is not long in a fresh form as you can imagine. Pick the freshest one you can. There’s usually someone at the store I go to that will weigh the kidneys and pack them up for me. So I ask him if they are fresh. You can look at the color too. It is usually brownish-gray in color, but if you see that it’s dark or turning black or the whole appearance is just dull, skip it!

HOW TO CLEAN AND PREPARE PIG’S KIDNEYS FOR COOKING
1. Rinse the kidney with water. Put on gloves if you choose to

4. Use a sharp knife to cut the kidney into half lengthwise
5. You will see all the fats and veins. All those need to be removed. You can first use kitchen shears to cut off the vein or you can skip this part and just use a small sharp knife to cut off the vein and remove the fat. It’s important to remove all of those to prevent odor when you cook the kidney
6. Once it’s cleaned, cut the kidney into 3-4 inch slices
7. Use a small knife to score the surface of the kidney with criss-cross patterns, taking care not to cut through it
8. Place the cleaned kidney slices in a bowl of cold water with 1 tsp of salt or use a milk (without salt), enough to cover the kidney and let them sit in the fridge for at least 2 hours or overnight if you can
9. Drain off the soaking liquid and rinse the kidney with fresh water. The kidney is pretty much ready to be cooked at this point
10. Bring water to a rolling boil
11. Cook them for about 30 seconds (depending on how big of a slice), they should be gray in color on the outside, but not fully cooked. This step is to get rid of the blood scums in your cooking. Do not overcook them or they will turn tough
12. They are ready to be used in stir-fry or in soup recipes

I’m not a nephrologist, but, Yes, kidney pretty much has the same function to most living organisms, to filter waste and blood and so the anatomy shouldn’t differ much.

The fat that surrounds the kidneys – the leaf lard or suet – is a very nourishing fat, firmer than other animal fats, and highly regarded. Seems that in the past, kidneys were nearly always sold with this fat in tact. If you get one – like this or this – be sure to save all the fat and render it. Preparing kidneys
Prepare kidneys in two parts. First, remove the excess fat or thin filament layer. Then, you can soak in cold water – one tablespoon lemon juice or vinegar and two teaspoons salt to two cups of water. This is optional and some dissuade soaking. There is still one more lobe of fat in the center of the underside of the kidney. For a smaller kidney like lamb, this can easily be snipped off.
For a veal or beef kidney, the fat meets the kidney with some connective tissue. This lobe is best pared off with a sharp knife, working your way around carefully cutting the connective tissue below to separate it. If it’s your first time trimming this, it’s not essential to remove it all – just get what you can – it will be enough.
After removing this lobe, you can separate most of the fat by pulling the fattiest parts off the top and reserving for use in the recipe itself or later. Ground kidney or other recipes that rely on this envelope of fat benefit from leaving it all intact.
Cooking kidneys
Similar to heart, kidneys have a lot of connective tissue. They are best cooked quickly (tender and still pink in the middle) or slow and low.
Partially boiling (parboiling) the kidney as a final preparation step is recommended for pork or beef kidney in some recipes. For example, when including kidney in soup, a parboil allows you to pour off impurities without muddying up the soup. Parboiling is also recommended before a quick, high-temperature stir-fry to keep the juices clear. In this case, avoid overcooking and limit the parboil to 1 minute max.
