7 foods that you can leave out overnight

The USDA says food that has been left out of the fridge for more than two hours should be thrown away.

At room temperature, bacteria grows incredibly fast and can make you sick.

Reheating something that has been sitting at room temperature for longer than two hours won’t be safe from bacteria.

There are some types of foods that don’t necessarily need to be stored in the fridge and some things like bread, that shouldn’t be kept in the fridge at all, so if you leave them out overnight, they’re still safe to eat.

You’ve probably accidentally left food out on your kitchen counter overnight at least once or twice, but is it still safe to eat?

According to the USDA, food that has been left out of the fridge for more than two hours should be thrown away. That’s because between 40° F and 140° F (what the USDA calls the “Danger Zone”), bacteria grows incredibly fast and can make you sick.

However, there are types of foods that don’t necessarily need to be stored in the refrigerator or won’t be as harmful to you if you leave them out for a while. Some foods, like bread, shouldn’t even be stored in the fridge in the first place.

Read on to find out what foods are still safe to eat after they’ve been left out overnight and be sure to throw out anything else that’s been left out for longer than two hours, or one hour if it’s a hot day.

View Full Version : Food Safety Question – Chili left out all night

nufenstein I spent about 2 hours (and $20) making a pot of delicious chili con carne (america’s test kitchen recipe) even using rendered bacon fat as my cooking oil 🙁

Stupid me left it out on the stove top, uncovered, to cool until i could put it in the fridge before bed. Woke up the next morning ( 8 hours later) with uncovered chili on my stove top…

What say you…risk the impending food poisoning and consume?

Or ditch the effort and learn a life chili lesson

FWIW I have had food poisoning 3 times in my life…

jrosendahl I have never had food poisoning, and would probably not hesitate to eat it. But I tend to use good meat.

There is math on food born illness and temperature here: http://amath.colorado.edu/~baldwind/sous-vide.html

Labcabin Reheat to 160 degrees?

DJSapp Simmer 20 minutes. Enjoy.

Moose Pit Eat it.

The top of the stove is where I store all sorts of dishes. It saves having to take them out of the fridge prior to reheating.

davep Its fine. I bring lunch and dinner to work with me every day. We have a fridge, but I’m too lazy to walk there to drop off my food. I pack my food at 9am and eat it at 9pm. No ill effects.

Tye 1on Simmer 20 minutes. Enjoy.

x2. If for some reason that was long enough for anything to get in to it, if you bring it up to a steady simmer for that long, stirring, that should kill anything that was there. One overnight, i wouldn’t worry.

[fyi, for best cooling pour into a larger, flatter pan to maximize cooling surface…]

Brock Landers Eat it.

I routinely make a chili in a big crock pot on Sunday evening and leave it out all week, unheated, and just fill up a bowl and stick it in the microwave for lunch/dinner/snack.

iceman I agree you should eat it but don’t recommend following the leave-it-out-all-week strategy.

MMP .

[fyi, for best cooling pour into a larger, flatter pan to maximize cooling surface…]

more dishes to wash vs. food poisoning

food poisoning FTW!

Dantheman x2. If for some reason that was long enough for anything to get in to it, if you bring it up to a steady simmer for that long, stirring, that should kill anything that was there. One overnight, i wouldn’t worry.

Not so simple, many of the toxins produced by food-borne bacteria (such as botulinum toxin) are heat stable. Reheating will kill off the bugs but will not destroy the toxins they produce, which are usually what actually makes us sick.

nufenstein Not so simple, many of the toxins produced by food-borne bacteria (such as botulinum toxin) are heat stable. Reheating will kill off the bugs but will not destroy the toxins they produce, which are usually what actually makes us sick.

My thoughts exactly after reading Yahoo answers and the like…

Looks like im ordering pizza tonight 🙁

pechelman uncovered is better than covered actually

so long as there is no mold growing on top, that looks like wrinkly fuzz, you are good to go

reheat and eat

did the same thing with a pot of black beans, but left it covered, and awoke the next morning to this crazy film of wrinkly looking mold growing ontop of the entire pot

i was very sad

iceman Not so simple, many of the toxins produced by food-borne bacteria (such as botulinum toxin) are heat stable. Reheating will kill off the bugs but will not destroy the toxins they produce, which are usually what actually makes us sick.

While that’s certqinly true, the most common food illnesses by far are caused by salmonella and e. coli and heat fixes those. You’re simply not going to get Botulism from a pot of chili left on the stove.

Grange It’s chili, eat it. Now if it were something like meatless lasagna or turkey bacon I’d say toss it because who would eat that shit anyway, but it’s chili! Add some another hot pepper of your choice, toss in some real bacon and eat it like a man.

Dantheman My thoughts exactly after reading Yahoo answers and the like…

Looks like im ordering pizza tonight 🙁

Wiki is actually not agreeing with me. I got that tidbit of information from my dad who did restaurant inspections for 10 years. He generally really knows his shit, but this is what Wiki has to say:

Botulinum toxin is neutralized at temperatures greater than 60 °C. The toxin itself is rapidly destroyed by heat, such as in thorough cooking.[9] However, the spores which produce the toxin are heat-tolerant and will survive boiling at 100 degrees Celsius for an extended period of time.[10]

I still wouldn’t eat it. I wouldn’t wish bad food poisoning on my worst enemy.

bagtagley I’ve done this exact thing lots of times, only longer. Just eat it, it’s fine. There’s so much salt and acid in there, it’ll hold off the bad stuff for a bit.

Also, I’d be more concerned about any beans. Those fucker go sour if you take your eyes off ’em.

Danno I just ate some canned soup, and the can said the expiration date was Dec 07. I hope I don’t die.

nufenstein …if it were something like meatless lasagna or turkey bacon I’d say toss it because who would eat that shit anyway….

Prime eye round chuck, marbled beautifully

….I’d be more concerned about any beans. Those fucker go sour if you take your eyes off ’em.

Chili con carne….just sauce and meat

…I wouldn’t wish bad food poisoning on my worst enemy.

Exactly why this is going in the dumpster. Have tangoed with food born illness too many times to play russian roulette with it…

DJSapp Simmer your damn chili and eat it, nancy.

http://www.cdc.gov/nczved/DFBMD/disease_listing/botulism_gi.html

How can botulism be prevented?

Botulism can be prevented. Foodborne botulism has often been from home-canned foods with low acid content, such as asparagus, green beans, beets and corn. However, outbreaks of botulism from more unusual sources such as chopped garlic in oil, chile peppers, tomatoes, carrot juice, improperly handled baked potatoes wrapped in aluminum foil, and home-canned or fermented fish. Persons who do home canning should follow strict hygienic procedures to reduce contamination of foods. Oils infused with garlic or herbs should be refrigerated. Potatoes which have been baked while wrapped in aluminum foil should be kept hot until served or refrigerated. Because the botulism toxin is destroyed by high temperatures, persons who eat home-canned foods should consider boiling the food for 10 minutes before eating it to ensure safety. Instructions on safe home canning can be obtained from county extension services or from the US Department of Agriculture. Because honey can contain spores of Clostridium botulinum and this has been a source of infection for infants, children less than 12 months old should not be fed honey. Honey is safe for persons 1 year of age and older. Wound botulism can be prevented by promptly seeking medical care for infected wounds and by not using injectable street drugs.

How common is botulism?

In the United States, an average of 145 cases are reported each year. Of these, approximately 15% are foodborne, 65% are infant botulism, and 20% are wound. Adult intestinal colonization and iatrogenic botulism also occur, but rarely. Outbreaks of foodborne botulism involving two or more persons occur most years and usually caused by eating contaminated home-canned foods. The number of cases of foodborne and infant botulism has changed little in recent years, but wound botulism has increased because of the use of black-tar heroin, especially in California. .

intheWRONGsummitcounty You said you used bacon grease for the chili. Botulinum spores are frequently found in pork, and although there is sodium nitrite in bacon to prevent the issue, there’s too much that could happen.

I say play it safe, since you’ve had food poisoning. Nothing is worth the nausea and wicked GI symptoms that accompany food poisoning.

iceman Dude they invented chili to mask the flavor of meat that was going bad and to keep it edible longer. You can look it up. Like bags said, the spice, salt and acid in there will protect you (I still wouldn’t leave it out for a week, though).

Tye 1on Exactly why this is going in the dumpster. Have tangoed with food born illness too many times to play russian roulette with it…

got it, already had course of action determined before question was posted.

DJSapp I heard phunk once drank milk past the expiration date. Is he still alive?

Danno Exactly why this is going in the dumpster.

This makes baby jesus cry.

bagtagley Chili con carne….just sauce and meat

Chili con carne can’t have beans? I mean, if I said I made a pizza with pepperoni, it doesn’t mean there’s not cheese on that sucker. 😀

carvedog I’m getting hungry.

MakersTeleMark I’ll take the chili.

I just ate some canned soup, and the can said the expiration date was Dec 07. I hope I don’t die.

A couple of weeks ago I found myself blasting canned goods from the dark ages at the shooting range. The tomatoes were my favorite.

cramer 30 days ago i would have ate that chili no 2nd thoughts. After waking up and puking and peeing out my ass all day about a month ago, i’ll never eat something i left out again. I dont know if it was food poisoning or i got some wicked bug, ill do all i can from experiencing a day like that again.

grskier As the great Weird Al once said:

Eat it!

Lonnie Feed it to some co-workers your don’t really like and see what happens….

iceclimb Pansy….

eat it. shouldn’t be that bad.

Unless you use mayo on your chili, and then you’re a pansy for a different reason.

nufenstein got it, already had course of action determined before question was posted.

Actually it was DTMs comment that determined my course of action but thanks for providing useful comments to this thread

hahah for all the great ideas…my favorite is the feed to coworkers…maybe I will bring it in on Wed and take thursday off “ill as well” to hit up some of the new snow…

Chainsaw_Willie Wish I lived closer to you, I’d take it off your hands rather than see it go in the dumpster.

nufenstein srsly…if someone in downtown denver wants this potentially deadly or delcious concoction…please come and get it (BYOTupperware) before i toss it…sanitary cooking techniques were employed (besides the storage overnight :)))

Tye 1on paging npg…;)

MakersTeleMark It would be funny to see a speed eating contest between NPG and Rontele.

nufenstein followed by a rousing game of battleshits?

Danno followed by a rousing game of battleshits?

Rontele would win that one.

DJSapp Actually it was DTMs comment that determined my course of action but thanks for providing useful comments to this thread

DTM’s comments that the toxins break down followed by my post from the CDC that the toxins break down with heat made your determination that you should throw it out?

Huh?

Patches What are you trying to do, live forever? Eat it.

AKturnanburn blah, blah, blah, I’m a pussy

Seriously? throw it out after a long cool down? I’ve worked in kitchens plunty and know what OSHA says, thats great and all and maybe if it was a half cooked piece of plain chicken or something. How do you think they came up with chili in the pre refrigeration days in mexico? add spice, something acidic and salt, 2 of those are curing agents and will keep that shit good for way more than 3 hours (by the time it cooled down).

Eat it and don’t be a little bitch.

stash searcher shoulda ate it.

think like a coyote.

only 8 hours? i’d reheat and then eat it.

as long as you’re not selling it to someone else…

stash searcher i’ve eaten 1950’s C-rations, and that was last year. pound cake. no preservatives, and it was fine… the pork and beans were fine, too. as were the crackers and jelly. they sure knew how to can stuff to last forever back then…

bptempleton I still wouldn’t eat it. I wouldn’t wish bad food poisoning on my worst enemy.

I wish it on everyone. It builds character.

teleee Dude, you are a nancy boy!

timnormandin I spent about 2 hours (and $20) making a pot of delicious chili con carne (america’s test kitchen recipe) even using rendered bacon fat as my cooking oil 🙁

Is that a skirt you’re wearing?:the_finge Eat the fucking chili. Now.

Gordyman I was looking for phunk’s milk thread and stumbled upon this one I either don’t remember or never saw.

I just ate two tamales I nuked and didn’t eat and left in the fridge 5-14 days? They tasted good. They were in a Tupperware container.

jz3 botulism only will grow in an anaerobic (no oxygen) environment. Even the bottom of the pot of chili will have plenty of O2 left overnight. Thats not an issue. Actually the only thing that might get you sick is any bacteria that fell into it overnight and grew; not too likely, I’d reheat and eat.

G for fuck’s sake. dump the chili into a ziplock bag, package it up, and fucking fedex it to me. I’ll eat the goddam chili.

StoneCold Trash it. Don’t risk the 24 hours you’ll spend on the shitter. Learn from your mistake. Next time, that chili goes in the fridge or freeezer ASAP.

neck beard This is pathetic, how scared modern people are of good old fashioned basic food that, wait for it, was left to cool and not refrigerated for… 8 hours.

Harden the fuck up.

back bowl Seriously?

Just eat the chili. I mean, even if you had taken the fucker and stuck it right in the fridge you wouldn’t have been able to cool it fast enough to prevent bacterial infection… You’re not worried about botulism- that takes a lot of time and a lack of oxygen- you’re just worried about e.coli and salmonella. Both of which can be killed with heat, and neither of which are really a concern because yer chili is pretty resistant to bacterial growth by virtue of acidity. You’ll get significant mold colonies before you get significant bacterial colonies.

Again. Just eat it.
