How Long Does Sushi Last?
Sushi is a traditional type of Japanese cuisine that’s quite popular around the world ( 1 ). Although many people associate sushi with raw fish, it can be made with a variety of cooked seafood as well. Other ingredients include vegetables and vinegared rice wrapped in dried seaweed (known as nori). Whether you have made sushi at home or dined out, you may have some leftovers. But how can you store sushi so that it’s safe to eat at another time? This article covers how long sushi can last, the best ways to store it, and how to identify signs of spoilage. Share on Pinterest Filippo Bacci/Getty Images
How long can sushi last before spoiling? The main ingredients in your sushi will dictate its overall shelf life and storage guidelines. Generally, the U.S. Food and Drug Administration (FDA) recommends that leftovers should not be kept at room temperature for more than 2 hours, and no more than 1 hour if you’re eating outdoors and the temperature is above 90oF (32oC) (2). This guidance applies to both raw sushi, such as sashimi, and cooked sushi, such as tempura or California rolls. When storing sushi in the fridge, however, the U.S. Department of Agriculture (USDA) advises that raw fish and shellfish can be refrigerated for 1–2 days, but 3–4 days when cooked (3). The goal is to keep sushi out of the temperature “danger zone” of 40–140oF (4–60oC) to avoid rapid bacterial growth, which increases your risk of foodborne illness (3). Type of sushi Storage at room temperature Storage in the refrigerator Raw (e.g. sashimi) Up to 2 hours 1–2 days Cooked (e.g. eel, California rolls) Up to 2 hours 3–4 days Summary Raw sushi can be stored at room temperature for up to 2 hours and in the fridge for 1–2 days, but cooked sushi can be stored for 3–4 days in the fridge.
How to safely store leftover sushi Raw fish and seafood — including sushi — should be tightly wrapped in plastic wrap, foil, or moisture-proof paper and stored in the refrigerator or freezer, according to the FDA’s guidelines for the storage of raw fish and seafood ( 4 ). Alternatively, you may store it in an airtight container, which reduces moisture and bacterial growth. Avoid containers that do not seal well, since these may promote bacterial growth or food spoilage ( 5 ). Refrigerate raw and cooked sushi for up to 2 and 4 days, respectively. Sushi may be frozen for longer storage; however, the quality of the product may become compromised. Summary Sushi should be placed in plastic wrap and refrigerated in airtight containers for the recommended times above for safe storage.
Signs of spoilage in sushi Here are some ways you can use your senses to tell whether your sushi dish has gone bad: Odor. The action of bacteria may cause sushi to spoil and emit an unpleasant odor. If you have stored sushi in the refrigerator, be sure to smell it for pungent odors before eating it ( 5 ).

Summary Use your senses to determine whether your sushi has gone bad by smelling for pungent odors, visually inspecting for color changes or mold, and touching it for slime.
Risks of eating spoiled sushi Raw fish and seafood, such as sushi and sashimi, are more likely to contain parasites and bacteria that can be transmitted to humans and cause foodborne illnesses (6, 7 ). Anisakidosis — larval infection of the gut — is a common foodborne illness associated with sushi in Japan, while sushi has been linked to salmonella outbreaks in the United States ( 1 , 8 ). Though individual symptoms may vary, the most common symptoms of a foodborne illness are diarrhea, vomiting, nausea, and stomach cramps ( 1 , 9 ). Cases of food poisoning may be severe, especially among those who are considered at higher risk of complications, including young children, older adults, pregnant people, and those with certain health conditions. In addition to the risk of foodborne illness, sushi may be a source of mercury — a toxic heavy metal that, in large amounts, may damage the brain, gut, and kidneys ( 10 ). Summary The major risk of consuming spoiled sushi is developing a foodborne illness, although sushi as a dish may be a source of the toxic heavy metal mercury.
How Long Is Sushi Good For After You Buy It?
In recent years, sushi has only grown more and more popular. People rave about its health benefits, as well as highlighting how it is a great choice for a light meal. Sushi on its own is also great for any time of the day, but sometimes there are leftovers.
Instead of wasting such a delectable treat, wouldn’t it be best to save it for later? Since sushi usually has either raw fish, avocado, or other ingredients that may change in quality or color over time, that leaves me wonder, how long is sushi good for?
How to Tell If Your Sushi Has Gone Bad
Eunice Choi
Let’s start with the sushi you order from a restaurant or supermarket. If the sushi has raw fish, it is okay to take home some leftovers and store them in a refrigerator up to 24 hours. The taste and texture of the sushi may change (e.g. softer sashimi, limp seaweed paper, harder rice), but there should be no harm in eating it 24 hours after it was made.
The important part to remember is to not leave it unrefrigerated because bacteria can actually grow on sushi that has a raw component, such a spicy tuna rolls and sashimi (which is basically just slices of raw fish).
Now imagine you have a box of sushi in your fridge and after you calculate the time you realize that your leftover sushi is quickly approaching hour 25. What do you do?
Alex Vu
First, take note of the color and the smell. If it smells fishy or even a little off to you, don’t risk it and just throw it away. If the color of the sushi looks a bit dull or just different from what you remember when the employee brought it out, best to throw it out. If it has a bit of mold (ew!) or leaves some slime, it’s time to ditch it in the bin.
How to Store Sushi
Caroline Ingalls
Although the Styrofoam box from the restaurant is fine, sushi should be stored tightly in a plastic wrap and then placed in an airtight container. Before wrapping in the plastic wrapper, it is essential to make sure there isn’t any excess water lingering on the rolls because this can actually promote bacteria growth. Lastly, make sure your refrigerator is at 41ºF (or 5ºC) to ensure that there will not be any warmth available to make the sushi go bad.
Now that you know how long sushi lasts, go out and eat sushi to your heart’s content. From sashimi (raw slices of fish) to maki (cut rolls with seaweed on the outside) to nigiri (no seaweed, just fish on rice), there is so much to enjoy.
Of course, you might have leftovers every now and again, but now you know how best to keep those delicious morsels from turning into a bacteria-riddled tragedy. While you’re waiting for your next sushi meal, why not figure out how many calories are in your favorite roll?
How Long Can Raw Seafood Last in your Fridge / Freezer?
It is rightly said that consumption of seafood may help you lead a longer and healthier life. Many people consider seafood as an essential part of diet, livelihood and culture. The best thing about seafood is the versatility it offers. Right from that light sizzle of your halibut on the grill to the clanking oysters in your stir fry and classic sashimi servings, the versatility of seafood can always leave you surprised.
You would be wondering that from such a wide variety of seafood, which fish or shellfish would be the best to consume raw, without getting any food-borne illness. Well, let’s tell you that the products, labelled as “sushi-grade” and “sashimi-grade, are perfect for raw consumption.
Raw seafood consumption is mostly associated with the risk of parasites, bacteria or tapeworm, simply because of its raw nature. Seafood safety experts recommend proper guidelines for the handling and storage of seafood. For instance, the study reveals that freezing seafood before consumption may kill many harmful bacteria or parasites that may be present in it. Keeping the health concerns in view, seafood companies like us label “sashimi-grade” seafood responsibly, after following the storage guidelines given by Food and Drugs Administration. When you buy sashimi-grade seafood, Let’s take a quick review of how long the raw seafood can last in your fridge or freezer.
Fresh Sushi or Sashimi in Fridge
If you want to consume raw seafood, either as sushi or sashimi, it is highly recommended to consume fresh seafood as soon as possible. If it is not possible, sushi or sashimi can stay in your fridge for up to 24 hours. Consuming it afterwards may cause foodborne illness.
Sushi or Sashimi in your Freezer
Freezing the fresh fish at home, to consume it as sashimi later is probably not a good idea unless you have a commercial freezer at home. The temperature in our domestic freezers takes quite a bit of time unless something inside becomes solid. During freezing, ice crystals form in the food and break down the structure of protein on the cellular level. The quicker it freezes, the lesser will be the crystals and the lesser the crystals the better the quality of the seafood for raw consumptions.
Flash-frozen Seafood For Sashimi
In case you want to store seafood for long, you should buy the seafood that is flash-frozen at sea. Commercial freezers do their job pretty quickly. In fact, the seafood can be flash-frozen solid in the matter of hours. Minimizing the timeframe between harvest and production, flash-freezing keeps your seafood at the peak o it’s freshness. Therefore, if you want to have frozen seafood as sashimi, always buy flash-frozen variety, so in that way, you can keep it in your freezers for up to 6 months for consuming it as sashimi (even longer if you want to consume it cooked).
Uni (Sea Urchin Gonads)
Uni is a famous delicacy that tastes best when fresh. Uni (sea urchin gonads) are best to consume in its raw state. It is recommended to serve uni as soon as possible, it lands in your fridge. However, it may last a few days in your fridge depending on the temperature of your fridge. Precisely, you can keep uni for up to 2 days in your fridge after receiving it for consumption as sashimi (and up to 5-7 days if cooked for example, in pasta). Also, make sure not to freeze it for sashimi because you will end up in losing its texture if that is important to you.
