Deep in the jungle of Cambodia, a hunter named Rith spends hours each day searching for tarantulas, which he sells for about 12 cents each to a restaurant not far from the historic Angkor Wat temple site.
Cambodians have hunted spiders for traditional medicine and sometimes food for generations, but eating them became widespread only in the mid-1970s, when the oppressive policies of the communist Khmer Rouge regime left people starving and with few options for survival. Perhaps 1.7 million people died from starvation, lack of health care, executions and overwork during that period.
Today, spiders — rich in protein, folic acid and zinc — are considered a delicacy and sold in markets and restaurants across Cambodia. The practice has also encouraged a lively tourist trade. Now, all this is threatened by deforestation, which is destroying the spiders’ natural habitat.
Cambodia’s forest cover decreased from 72 percent in 1973 to 46 percent by late 2013. This rate of deforestation, one of the fastest in the world, is due to rapid and unregulated development, including large agro-industrial projects, and logging, some of which is illegal. Little by little, the areas where spiders nest are being reduced.
The spiders eaten in Cambodia are Thai zebra tarantulas, called “apin” in the Khmer language. Roughly the size of a person’s palm, they breed in holes in the ground deep in heavily forested areas. Spider hunters walk day and night in search of the nests in forests in Preah Vihear province, near the Thai border, and Kampong Thom province’s Sandan district.

Rith — who identified himself by only his first name — wets the end of a small stick with gasoline and places it in a tarantula nest. The fumes force the spiders out, where the hunter can collect them easily and safely.
Although an apin bite is not deadly, hunting spiders can be a dangerous business. Sometimes hunters misidentify the nests, Rith says, and find themselves confronting snakes or scorpions. And an apin bite hurts even if it doesn’t kill.
“Sometimes we are bitten by the spider, so we try not to place our hands inside the nests,” Rith says. “When the poison gets into the blood, it hurts a lot. . . . We can have very high fever and get very sick, swollen and paralyzed for one or two days. But we do nothing. We don’t know how to take the poison out. We normally go to the traditional doctor, and he applies some herbs to the bite.”
Decades of civil war in Cambodia have left the country heavily mined, presenting hunters with another danger. Estimates of the number of unexploded land mines throughout Cambodia range from 4 million to 6 million.
Yet for many people in a country where more than 20 percent of the population lives on just over $1 per day, the risk is worth it. A good hunter can catch approximately 100 spiders per day, which can bring in a daily salary of close to $12. Entire families, children included, hunt together in the forest.
Each day, spider hunters sell their catch, still alive, to vendors in markets all across the country. One of the most popular places is the Skuon market, about 45 miles from the capital, Phnom Penh. Skuon has become a popular tourist attraction, where hundreds of spiders are either resold or cooked in the numerous restaurants that have opened around the market, drawing locals and tourists alike.
Although they can be grilled and served with rice and vegetables, the most popular way to cook spiders is to season them with soy sauce, garlic, salt and even sugar, and to fry them until crispy. The body, which has the most meat, is said to be the best part of the spider, although the legs and tail are eaten as well. Female spiders are favored, as the eggs they hold inside are considered especially flavorful.

Tarantulas are also used in traditional medicine to treat knee, back and breathing ailments, to increase men’s sexual prowess and energy, and to make women more beautiful. They are marinated in rice wine for a month before being sold by traditional doctors.
Hundreds of visitors come to Skuon every year to see Cambodia’s biggest spider market, where local children playing with their pet tarantulas or carrying trays of fried spiders have become a tourist attraction of their own.
Deforestation will have severe economic repercussions for the hunters and market vendors and countless other communities that depend on the forest for their livelihood.
It may also undercut a local solution to a severe shortage of good food. Although Cambodia has greatly reduced its rates of poverty and hunger in recent years, malnutrition remains a problem. According to the International Food Policy Research Institute’s 2014 Global Hunger Index, 40 percent of Cambodian children younger than 5 are chronically malnourished, resulting in stunting, and 50 percent of them suffer from anemia.
In parts of Cambodia, the apin could help address some of these problems, according to a study by the University of Copenhagen; tarantulas have a particularly high zinc content, which is essential for child growth. Yet with deforestation showing no sign of slowing and with the tarantulas’ habitat diminishing, this opportunity to counteract malnutrition may be lost.

Deep in the jungle of Cambodia, a hunter named Rith spends hours each day searching for tarantulas, which he sells for about 12 cents each to a restaurant not far from the historic Angkor Wat temple site.
Cambodians have hunted spiders for traditional medicine and sometimes food for generations, but eating them became widespread only in the mid-1970s, when the oppressive policies of the communist Khmer Rouge regime left people starving and with few options for survival. Perhaps 1.7 million people died from starvation, lack of health care, executions and overwork during that period.
Today, spiders — rich in protein, folic acid and zinc — are considered a delicacy and sold in markets and restaurants across Cambodia. The practice has also encouraged a lively tourist trade. Now, all this is threatened by deforestation, which is destroying the spiders’ natural habitat.
Cambodia’s forest cover decreased from 72 percent in 1973 to 46 percent by late 2013. This rate of deforestation, one of the fastest in the world, is due to rapid and unregulated development, including large agro-industrial projects, and logging, some of which is illegal. Little by little, the areas where spiders nest are being reduced.
The spiders eaten in Cambodia are Thai zebra tarantulas, called “apin” in the Khmer language. Roughly the size of a person’s palm, they breed in holes in the ground deep in heavily forested areas. Spider hunters walk day and night in search of the nests in forests in Preah Vihear province, near the Thai border, and Kampong Thom province’s Sandan district.

Rith — who identified himself by only his first name — wets the end of a small stick with gasoline and places it in a tarantula nest. The fumes force the spiders out, where the hunter can collect them easily and safely.
Although an apin bite is not deadly, hunting spiders can be a dangerous business. Sometimes hunters misidentify the nests, Rith says, and find themselves confronting snakes or scorpions. And an apin bite hurts even if it doesn’t kill.
“Sometimes we are bitten by the spider, so we try not to place our hands inside the nests,” Rith says. “When the poison gets into the blood, it hurts a lot. . . . We can have very high fever and get very sick, swollen and paralyzed for one or two days. But we do nothing. We don’t know how to take the poison out. We normally go to the traditional doctor, and he applies some herbs to the bite.”
Decades of civil war in Cambodia have left the country heavily mined, presenting hunters with another danger. Estimates of the number of unexploded land mines throughout Cambodia range from 4 million to 6 million.
Yet for many people in a country where more than 20 percent of the population lives on just over $1 per day, the risk is worth it. A good hunter can catch approximately 100 spiders per day, which can bring in a daily salary of close to $12. Entire families, children included, hunt together in the forest.
Each day, spider hunters sell their catch, still alive, to vendors in markets all across the country. One of the most popular places is the Skuon market, about 45 miles from the capital, Phnom Penh. Skuon has become a popular tourist attraction, where hundreds of spiders are either resold or cooked in the numerous restaurants that have opened around the market, drawing locals and tourists alike.
Although they can be grilled and served with rice and vegetables, the most popular way to cook spiders is to season them with soy sauce, garlic, salt and even sugar, and to fry them until crispy. The body, which has the most meat, is said to be the best part of the spider, although the legs and tail are eaten as well. Female spiders are favored, as the eggs they hold inside are considered especially flavorful.

Tarantulas are also used in traditional medicine to treat knee, back and breathing ailments, to increase men’s sexual prowess and energy, and to make women more beautiful. They are marinated in rice wine for a month before being sold by traditional doctors.
Hundreds of visitors come to Skuon every year to see Cambodia’s biggest spider market, where local children playing with their pet tarantulas or carrying trays of fried spiders have become a tourist attraction of their own.
Deforestation will have severe economic repercussions for the hunters and market vendors and countless other communities that depend on the forest for their livelihood.
It may also undercut a local solution to a severe shortage of good food. Although Cambodia has greatly reduced its rates of poverty and hunger in recent years, malnutrition remains a problem. According to the International Food Policy Research Institute’s 2014 Global Hunger Index, 40 percent of Cambodian children younger than 5 are chronically malnourished, resulting in stunting, and 50 percent of them suffer from anemia.
In parts of Cambodia, the apin could help address some of these problems, according to a study by the University of Copenhagen; tarantulas have a particularly high zinc content, which is essential for child growth. Yet with deforestation showing no sign of slowing and with the tarantulas’ habitat diminishing, this opportunity to counteract malnutrition may be lost.
