The Ribs Primer
From left:
Baby-Back Ribs
What they are: These lean, curved slabs, taken from the pig’s rib cage near the backbone, are prized for their sweet, juicy meat. A full rack has about 8 ribs. Select one that is 2 pounds or less for the most tender meat. Plan on 1 pound per person.*
How to prepare them: Precook for 2 to 2½ hours, then grill over medium-high heat for 4 to 5 minutes. Pressed for time? Skip precooking and just grill over medium heat until tender (the meat will be slightly tougher but still delicious), 25 to 30 minutes.
Beef-Back Ribs
What they are: Classic Texas fare, these are the same ribs found in a prime rib roast. They have little meat, but what’s there is very flavorful (think steak). Beef ribs are large, usually measuring 8 inches. A full rack has 7 to 8 ribs and weighs 3 to 4 pounds. Plan on 1½ pounds per person.
How to prepare them: Grill, covered, over indirect low heat until tender, 4 to 5 hours. (See our directions on cooking with indirect heat.)
Country-Style Ribs
What they are: Sold individually (sometimes boneless), these meaty ribs come from the upper loin of a pig. (No wonder they look more like chops than standard ribs.) For barbecuing, choose ribs with lots of marbled fat: With precooking, they become extremely tender. Plan on 1 rib (about ½ pound) per person.
How to prepare them: Precook for 2½ to 3 hours, then grill over medium-high heat for 4 to 5 minutes. Alternately, braise them.
* Why different serving amounts for different cuts? Ribs vary in terms of the meat-to-bone ratio.
Why do men have fewer ribs than women?
THE BODY BEAUTIFUL
Why do men have fewer ribs than women? MEN and women have 12 pairs of ribs (a few individuals have 13 or 11 pairs). The idea that men have fewer ribs than women is widespread but wrong, perhaps deriving from the biblical story of Eve being made from one of Adam’s ribs. Steve Harper, Lecturer in Anatomy and Physiology, Thanet Technical College, Broadstairs, Kent. IT’S untrue. There is, however, a disease known as cervical rib which produces a single extra rib at the base of the neck. This is very rare indeed and can occur in either sex. James Mercer, Sheffield. This is Biblical bull. Both men and women have the same number of ribs, 12 pairs. J. Bean, London It is logical that men and women would have the same number of ribs. The rib cage protects the vital organs within the rib cage. Surely a Creator could replace Adam’s rib once he had made the point that Eve would walk beside Adam, not above him nor below him but she was of his flesh and was his helpmate. v.Haselden, Auckland New Zealand @J Bean: The Bible does not claim that men have less ribs than women. The Bible says that a rib was taken from Adam, and the woman was built around that rib. I heard once that a kidney could be taken from a donor and implanted into somebody else, is this medical bull? Chuck cuts have some connective tissue that enhances the meat’s flavor and tenderness, but these cuts are generally more chewy than other rib cuts. Prime rib cuts contains bone pairs six through 12.
