This week’s Question of the Week was, “Have you been able to successfully cook in your camper with a convection microwave?”

“I use a very accurate oven thermometer. If my recipe calls for 350-degrees, I will preheat the oven higher because, when you put your food in, the temperature drops dramatically and it takes awhile for the temperature to catch back up.

Watch your oven thermometer closely and adjust the temperature accordingly.

“I love, love, love my convection oven. We bake in it all the time. Cookies, cookies, cookies! Did I say cookies?!? We also bake muffins, biscuits, cakes, meatloaf, chicken, fish, etc.

Yes, sometimes you have to get a little creative, but the convection microwave is a winner-winner – chicken dinner! I will never have an RV without one, ever again.

I have tried to cook in those horrible RV ovens. I tried every trick that people told me; bricks, special pans, pizza stones, and tiles. The top of my food was never cooked and the bottom was always burned. With the convection oven, it cooks perfectly – just like at home.

One of my hints is that I use a spring form pan (like what’s commonly used for cheese cakes) for almost all my baking. I use foil to line it, or I may use just the bottom to bake cookies, biscuits, or fish. Easy!

Salmon Frittata Recipe

6 beaten eggs

3 ounces cream cheese – cubed in very small pieces

3 tablespoons fresh chopped Basil

3 tablespoons fresh chopped Chives (or Green Onion)

Salt and Pepper

1/3 cup milk

Pam spray or butter to grease cooking dish

4 ounces smoked salmon, skin removed, chopped

Optional: Grilled asparagus cuts

3 tablespoons finely chopped Red Onion

Preheat the convection microwave oven to 350-degrees Fahrenheit.

Mix eggs, cream cheese, basil, chives, salt and pepper, milk, salmon and asparagus.

At home I use an iron skillet, but the handle gets in the way. I line a springform pan with foil, grease or spray with Pam, and pour the above into it.

Bake in preheated convection microwave oven 20-40 minutes until eggs are set (larger eggs may take longer).

I am very happy to share with all of you that I have launched a new series on my Youtube channel! It is called the ‘’How To Series’’ and I am extremely excited for all of you to see it! Every time I share a recipe video on my Youtube channel, I get a lot of questions about various things and more often than not, I also get the same questions again and again. This is why I decided to do this series and answer all your questions in detail. The first episode had to be the most frequently asked question ever! And that is how to bake a cake in a microwave!

I understand that a lot of you do not have ovens at home and this is why everytime I share a recipe, you all ask me whether you can make that in a microwave and how to do the same. Baking a cake in a microwave is super easy, and can be used for any cake recipe! Yes, you read that right. You can make any cake you like in a microwave.

Even in microwaves, some of you might have convection microwaves and some of you might have non convection microwaves. Majority of people think that baking a cake in a microwave can only be done in a convection microwave but that is just not true. Read on and you’ll see that a normal heating mode on a microwave will also bake a cake just fine!

Is a Convection Microwave necessary for baking a cake?

If you don’t have a convection microwave, you can still make a cake in the normal heating mode. Here, it becomes important to note that you can only use microwave safe cookware. This includes a microwave safe glass cake dish or a silicon baking item.

Make sure to not use the steel rack here that usually comes with microwaves, because it is unsafe to use in the normal heating mode. Just keep the microwave safe glass dish on the revolving plate and bake the cake.

Making a cake in the normal heating only takes 5- 7 minutes. So take care of the timings and the texture will be slightly different. Your cake might also be dry. To fix that, you can soak it in a sugar syrup and turn it into a moist cake.

What are the steps to bake on the convection mode?

When you put your microwave on the convection mode, it starts functioning like an oven.

First things first, put your microwave on the convection mode. To do that you need to :

Preheating

1. Press ‘echo/stop’ button

2. Press convection

3. Press select

4. Your microwave will automatically go to Pre heating mode

5. Place the steel wire rack inside

6. Set the temperature

7. Press start

Cooking

Make sure that your batter is ready to be put in the microwave as soon as the microwave is done preheating because the microwave will only retain that temperature for 10mins. Once you’ve put the cake pan inside, you need to do the entire process again. Set the microwave on the convection mode, set your temperature and this time you also need to fix your time. Remember that when using a convection microwave, baking time gets reduced by 25%. For example, if a cake takes 30mins to bake in an oven, it would take 7.5 mins less in a convection microwave. So set your time accordingly.

Cooling Down

Once your cake is ready, take it out of the microwave and let it cool down completely. Press the stop button and make sure to not switch off the microwave from the main switch. While it’s cooling down, it’ll make a sound. Once the sound stops, it means the microwave has cooled down.

That’s it. That is how easy it is to make a cake in a microwave. You can use any of my cake recipes and bake them in the microwave using these steps. The cake will come out beautifully!

You will not believe how easy this is, and how great they taste.

What do you need to make drop biscuits in the microwave?

You need a box mix of Jiffy biscuit mix and some water. That is it! One box will make about 6 biscuits.

You can substitute any other complete biscuit mix that just requires water, and you should get the exact same results.

How do you make drop biscuits in the microwave?

I pour the mix into a bowl and then make a well for the water. Once I’ve added the water, I just mix it up until it’s all completely combined. The dough will be sticky, but that’s okay.

When making drop biscuits, you’ll usually just drop them by the spoonful right onto the cookie sheet, but we don’t have one of those. So, we are going to use cupcake liners.

Just eyeball it and take a glob of the biscuit dough and fill the cupcake liner about 2/3 full. Don’t overfill because these do expand in the microwave.

Next, we microwave them! I put mine on a plate, but you can put the cupcake liners right in the microwave if needed.

For 2-3 biscuits microwave on high for 1 min.

For 4 biscuits microwave on high for 1-1/2 min.

For 6 biscuits microwave on high for 2 min.

The biscuits will not brown at all; they will be all white. But, they will be nice and fluffy.

Eat ’em while they’re hot!

One thing I have noticed while eating microwave biscuits is that they will get a little chewy as they get cold. They taste amazing just fresh out of the microwave, so make sure to eat them fresh and hot.

I would recommend making all the other things you’re going to eat with them before you make the biscuits.

What do you eat with drop biscuits?

So many things! Here’s a few ideas:

Sausage Biscuits with sausage patties in the microwave.

Bacon Cheese Biscuits with a slice of cheese and bacon slices.

A Big Breakfast with fluffy scrambled eggs and bacon.

Crumbled over chicken soup.

My favorite way – slathered in butter and jam (or honey).
