It really comes down to answering a simple question: should sweet potato pie wiggle in the middle?

Just like cookies are overkill when they look done in the oven, sweet potato pie shouldn’t look done in the oven. The center of the cake should wobble slightly.

The reason for this is the carryover heat. Just because we take the cake out of the oven doesn’t mean it suddenly stops baking.

The cake comes from a 350 degree oven and the cake itself is definitely not that hot. It takes time for the cake to cool enough that it no longer gets hot.
