How to prevent candies from sticking together
The main reason candy gets sticky is because it has been exposed to moisture. The candy is devoid of moisture, so it will soak up whatever it can find.
Kind of like I did in the days following my month-long chocolate ban. I ate every chocolate I saw.
The best way to prevent this is to add something else to your candy storage container that will absorb the water first.
Then there is nothing left to ruin the candy.
In my case, that meant taking my chocolate-obsessed niece with me everywhere. She ate everything before I could reach it.
Coat the candies in cornstarch
Cornstarch is the best way to keep candies from sticking together. And no, you can’t taste it.
Cornstarch has a very fine texture, EXCELLENT ability to absorb moisture and is virtually tasteless.
These three factors make it the perfect candidate for preventing candy from sticking together.
The fine texture means it coats the candy thinly and evenly, and its lack of flavor means it doesn’t affect the taste of the candy.
But most importantly, it absorbs any moisture from the air surrounding the candy. This will protect the candies and prevent them from getting sticky.
The cornstarch worked best for me in my experiment. You could tell the candy was coated with something, but it only looked like a layer of sugar.
Even if the candies were a little sticky before you coated them, the cornstarch was still effective. This was not the case with some other methods.
Coat the candies with powdered sugar
Powdered sugar is the next best thing to keeping your candies from sticking together
An alternative to cornstarch is powdered sugar, also known as powdered sugar or powdered sugar.
Powdered sugar often contains cornstarch to prevent caking (the sugar turns into a hard lump because it’s absorbed some moisture).
As such, powdered sugar is just another way to coat your candies with cornstarch. Except it adds a little more flavor.
The sweetness of the sugar is great if you have a real sweet tooth!
I found powdered sugar to be slightly less effective than cornstarch, but not by much. The sugar tends to clump up a little more than the cornstarch, but still keeps the candies fluffy.
Spray your molds with a light cooking spray
Coating your candy in a powder is simple and effective, but it comes with a downside.
It will dull the shine of your candies and give them a dusty texture.
If you want to keep the shine, one solution is to coat your candy in an unflavored oil.
Food-grade mineral oil (available on Amazon) is best, but you can also use coconut oil or PAM cooking spray. If using molds, coat the molds before placing the candy inside. This will also prevent the candy from sticking to the molds.
Oils are naturally slippery and also absorb moisture. They work well for keeping the candy non-sticky. (Is that even a word?).
This method worked well in the short term, but I’m not sure it would hold up over the long term. Make sure you only have a very thin layer on top of the candy. Too much gives it a slimy texture.
Use granulated sugar
Sugar is hygroscopic, which means it absorbs moisture from the air.
The sugar in your candies makes them sticky when they come into contact with water.
When you roll your candy in granulated sugar, the outer sugar absorbs the moisture before it gets to the candy, protecting your candy from damage.
It also makes your candies extra sweet and gives them a crunchy texture.

In my opinion, granulated sugar is useful in a pinch.
But since granulated sugar isn’t powdered, I found it difficult to get a good coating. If you have powdered sugar, try that first.
Place rice at the bottom of your storage container
Using rice is great IF your candy isn’t already sticky before you store it
If you drop your phone in some water, you can almost GUARANTEE someone will say, “Quick, put it in some rice!”
This is actually a practical suggestion. Dry rice absorbs moisture quickly, helping to dry out your phone.
The same goes for your candies. Fill the bottom of your container with dry rice to prevent moisture from ruining your candy.
You can even color the rice with food coloring to add a decorative touch.
The rice worked just fine, but you have to be careful that the candies aren’t sticky when you put them in the jar. Otherwise the rice will stick to it and this is not ideal!
Use desiccant packets (silica gel packets)

What is a desiccant?
Desiccant is a collective term for a substance that you can use as a desiccant.
But what I mean are those tiny packets that you find in shoe boxes and electronics. The packs are filled with silica gel or beads.
Silica readily absorbs water from the air, meaning there’s nothing left for your candy to absorb.
The cool thing about these packets is that you can regenerate them in the microwave (so easy!!). I use these packs from wisedry (sold on Amazon). I like them because they change color depending on how much moisture they’ve absorbed.
So you can see how they work and know exactly when they need to dry.
The silica gel packets are great because they could easily be added to the candy container afterwards. They worked well, but they’re not something most people have on hand.
Wrap candies individually
This isn’t my favorite method (I’ll tell you why in a moment), but it’s very effective.
Wrapping each candy in cellophane or candy wrap (moisture-resistant wax paper sold on Amazon) protects it from exposure to air and therefore moisture. For long-term storage, it is imperative that your packaging is not permeable to air vapor.
I’m not a big fan of this option because it feels pretty wasteful, and I try to avoid excess packaging when I don’t have to.
In most cases, cornstarch or one of my other suggestions will work.
It also takes a long time if you have a lot of candy!
How to store candy so it doesn’t get sticky
Aside from adding things to your container or coating your candy, there are things you can do in terms of storage that will help keep the candy from sticking.
Choose a suitable (air blocking) container
Everyone knows you need to store your candy in an airtight container, but which airtight container is best?
Plastic is not suitable here because it is permeable to air vapor. Water vapor from outside the container can penetrate the plastic and make your candies mushy and sticky. You can remedy this by having silica gel packets in the container. But just so it doesn’t happen in the first place…
Use a glass container.
Glass is not permeable to air vapor. You don’t have to worry about water entering from the outside.
Store them in a cool, dry environment
Candies must be stored in a cool, dry place out of direct sunlight.
The pantry is perfect, or a basement if you are sure there are no vermin.
The temperature in the pantry is relatively stable and it’s nice and dark.
Keep them separate from other types of candy
Hard candies should be stored separately from candies that give off moisture.
Otherwise, a moisture exchange will begin.
The hard candies pull moisture from the softer candies, leaving the hard candies soft and the soft candies hard.

Fudges, creamy candies, and jelly candies are all considered soft. Caramels, mints, and all candies are considered hard candies.

Fail to prepare and prepare to fail, goes the saying.
You can start preparing your sweets so that they are rock hard when you cook them.
Make sure all moisture has evaporated from your mixture
Candy can absorb moisture from the air, making it sticky.
But if you don’t cook all of the moisture out of the candy mix during the heating phase, that moisture can come back and bite you.
Excess moisture in the candy makes it sticky.
You need to triple check that all moisture has evaporated. Heat your mixture to AT LEAST 300 degrees, maybe even 310.
Use an accurate thermometer
This comes together with the above suggestion.
Cheaper thermometers can have a shocking margin of error, sometimes as much as +/- 20 degrees!
To test your thermometer, boil a pot of water and check the temperature. It should read 212 degrees. If not, I recommend you buy a new one. But until then, you can just calculate the difference and add or subtract it to your candy temperature readings.
Another thing to watch out for is holding your thermometer too close to the bottom of the pan. This can falsify the measured values.
You can use either an instant-read thermometer (usually marketed for meat) or a candy thermometer. These candy thermometers (available on Amazon) have a clip that allows you to attach them to the side of your pan. This means you get a consistent temperature reading.
Store the candies AS SOON as they have cooled
I repeat that.
Whatever your storage plans, do it AS SOON as the candy is cool. The longer the candy is exposed to air and moisture, the more likely it is that it will become sticky.
Once they are cool enough not to cause condensation in their container, put them away.
Cook and refrigerate the candy in a non-humid environment
If candy were ice, moisture would be heat.
They just don’t mix. High humidity means there is more water in the air, so the candy will become sticky MUCH faster.
If you’re planning on cooking up sweets but the day turns out to be super muggy, it’s best to wait for another, less muggy day.
If you live in a climate where humidity is the norm, try blowing a fan over the candy cooking/chilling area. The air conditioning is also a big help.
How long do candies keep?
Hard candy will keep at its best for up to a year if stored properly. After this, the flavors and colors may become dull, but the candies are still safe to eat.
If moisture gets into the candy, it will become very sticky and less appealing. The wetter your environment, the shorter the lifespan of your candy.
Can you freeze candy?
You can freeze candy, but it’s usually not necessary. Hardy Candy does not have moisture and is therefore not affected by freezing. It’s just getting really cold. In most climates, the candies will last just as long at room temperature as they will in the freezer.
If you live in a very humid place, the freezer can help extend the life of your candy by protecting it from excess moisture in the air.
The tricky part is then getting them out of the freezer. You don’t want condensation to form on the candy as it will make them sticky.
Store your candy in its airtight container and wrap in a kitchen towel. Then slowly let the candies come to room temperature. This reduces the risk of condensation.
Should you keep candies in the fridge?
No, you should store candies at room temperature, not in the refrigerator. For safety reasons, it does not need to be refrigerated and sweets keep longer at room temperature than in the refrigerator. Moisture or condensation in the refrigerator can make your candy sticky.
While your fridge itself may not be humid, the food inside contains a lot of moisture that your candy can absorb. The condensation that forms when the refrigerator is opened also has an effect.
The only time I would say it’s okay to store your candy in the fridge is if you live in a tropical environment where it’s very humid most of the time.
Then your sweets will be a little better protected from moisture in the fridge, but they won’t last as long as they would in a non-humid pantry. Another idea would be to freeze them.
