My kids absolutely love making and eating shaved ice (aka snow cones), but I’m not a huge fan of what’s in those syrups you buy at the store. So I experimented with fresh fruit for healthier options. The kid loves them and I’m happier knowing what ingredients are in them, it’s a win-win for everyone. There’s still a bit of sugar in this recipe, so I won’t call it healthy, but there are just a few basic ingredients and a lot fewer chemicals! The great thing about this recipe is that the syrups can be stored in the fridge for up to a week. You can spend a day making a flavor or two and enjoy them all week. This recipe saves time and money!

I was actually surprised at how well my blender works when making very fine shaved ice. The trick is to make sure you don’t put too much ice in at once. Fill your blender only about halfway, then pulse a few times on highest speed before blending on high until all of the ice is shaved.

I’ve had the most success making the shaved ice right before using it. If you try to freeze it after shaving, it tends to clump and won’t have the best consistency. If you’re an ice cream or popsicle guy, then you’re in luck! This raspado recipe is sweet, refreshing, and extremely easy to make at home.

What are raspados?

You may know raspados as shaved ice, as this treat is found in pretty much every country in the world. Some other names for raspados are raspas, snow cones, piraguas or granizados to name a few.

In Mexico, you’ll find raspados (or raspas) served up by street vendors and palerías to cool off from the heat.

Raspados are made by first shaving fresh ice into a cup and then pouring a sweetened mixture over it. There’s a wide range of flavors, but common ones include mango, pineapple, tamarind, rompope, lime, and guava.

This mango raspado recipe is packed with natural flavors and dispenses with food coloring or added syrups. It’s also quite similar to a mangonada, but the mangoes aren’t mixed with the ice cream.

Are Raspados vegan?

Yes and no. There are many raspados that contain evaporated or condensed milk (depending on taste or whether it’s drizzled on top).

For this recipe, we kept it plant-based, simple, and healthy. We only use fresh fruit as the base for our topping!

Because this dessert is so popular around the world, it likely evolved over many time periods, regions, and groups of people.

One of the first written reports mentioning shaved ice is said to date back to 27 BC. CE Nero, then Roman Emperor, had slaves collect snow from the mountains to serve with fruit and honey.

In the 19th century, Japanese immigrants to Hawaii began cooling off with shaved ice after a day’s work in sugar and pineapple fields.

The concept ‘Kakigori’, meaning ‘shaved ice’, came about because they used their tools to shave ice off large blocks and coated it with fruit juice and sugar.

Shaved ice became “raspado” in Mexico, meaning “shaved.” It is now served across the country in a variety of flavors such as tamarind, cajeta, lime, pineapple, etc.

One thing is for sure — people of all ages, ethnicities, and cultures seem to love the sweet, refreshing taste of raspados.

Step 1: Bring the water and sugar to a boil in a saucepan. Meanwhile, peel the mangoes and cut into small cubes. Add to the pot and simmer again until the mangoes are soft.

Step 2: Once the mangoes are soft, mash them with a potato masher and allow the mixture to reduce to a syrupy consistency. Remove from the heat and let the mixture cool for a few hours before serving.

Step 3: Place 1-2 cups of ice cubes in a blender and blend until ice is crushed (like shaved ice). Don’t overfill your blender!

Raspados Mexicanos are quick and easy to make if you have some fruit mix on hand. Follow these tips for optimal storage.

Mango mix freezes well for up to 3 months as long as it is stored in freezer-safe containers. When you’re ready to make another raspado, thaw the fruit mixture in your refrigerator overnight.
