Chinese Dumplings 饺子 [jiǎo zi] is one of the most beloved Chinese dishes worldwide. In this video we are going to make dumplings from scratch, which means preparing the wrappers as well as the juicy umami filling at home in just a few steps. Not just this, spoiler alert, we are going to cook these beauties with three different methods: boiled, steamed, and pan-fried. For the filling we are going to be making the most traditional one, napa cabbage and minced pork. As we are approaching the celebrations of the Chinese New Year, as always, with lots of eating and food gatherings, we thought that showing you how to make dumplings at home would come in very handy these days. So why not spending a couple of hours at home trying out this recipe? Get ready for your next dumplings party at home and do not forget the dipping sauces.

INGREDIENTS:
[1] WRAPPERS
•All-purpose flour (500g)
•Salt (1g)
•Boiled water (250g)
[2] FILLING
•Minced pork (600g)
•Napa cabbage (500g)
•Ginger (20g)
•Garlic (10g)
•Onions (10g)
•Hot water (150g)
•Salt (5g) + extra (5g) for the cabbage
•Sugar (3g)
•Soy sauce (3 tbsp)
•White pepper (pinch)
•Starch (15g)
•Sesame oil (10g)
[3] DIPPING
•Black bean chili oil (have a look at ChinEAT sauces and try out different flavors)
COOKING PROCESS:
WRAPPERS PREPARATION:
[1] Take a big empty bowl and add the flour inside together with salt. Mix properly with some chopsticks.
[2] Add the boiling water (slowly and into 3-4 batches). Use chopsticks to mix it with the flour.
[3] Work out the flour with your hands for about 20 minutes to obtain the dough.
[4] Cover with some cling film or with a damp cloth and set to rest for 30 minutes at room temperature.
[5] Knead your dough again for 5-10 minutes and set it to rest for 30 minutes. Repeat this step twice.
[6] After kneading your dough for a total of 3 times, you should have obtained a nice and smooth texture, essential for the dumpling sheets.
[7] Divide the dough into 6 parts and place it into a pasta rolling machine for obtaining a thin sheet (set the roller’s settings to 1 or 2 first, meaning the high thickness, and gradually adjust to 5 or 6, to obtain a perfect wrapper sheet).
[8] Make sure you cover the working surface, your hands, and the rolling machine with some flour to help you out with stretching the dough.
[9] Use some biscuits/dumplings round cutters to shape the sheets into round wrappers.
[10] Sprinkle some flour onto each wrapper and set aside.
[11] For the remaining dough, obtained after cutting all the round wrappers, keep kneading it to obtain a smooth piece to insert back into the rolling machine).
FILLING PREPARATION:
[1] Chop the white cabbage into cubes (not too small as to avoid the fibers to break up completely).
[2] Add in some salt, mix well for 2-3 minutes, and set aside.
[3] Mince finely the green onions (white parts), garlic and ginger and set aside into hot water. Let it cool down.
[4] Place the minced pork into a big bowl.
[5] Start adding the aromatic water inside and mix from one direction (divide this into 3 steps, adding slowly the water inside, letting the meat absorb it).
[6] Add in the salt, together with soy sauce and white pepper, with a pinch of sugar.
[7] Add some starch and some sesame oil, keep mixing from one direction (chopsticks do a great job).
[8] Take back the bowl with cabbage and squeeze it properly to remove any moisture.
[9] Add the cabbage inside the bowl with the minced pork filling and mix well.
[10] Leave the filling into the fridge for about 30 minutes.
ASSEMBLY:
[1] Take some of the filling and place it into the middle part of the wrapper.
[2] Use some water on the internal edges of each wrapper to make them sticky and help with closing them.
[3] Fold the dumpling as a taco and close in the middle.
[4] Start from one side and pinch the edges of the wrappers starting from the outside, closing versus the inside part. Repeat it.
[5] Sprinkle some flour on top and set aside.
