The grapes are received and inspected upon arrival at the winemaking cellar and were pre-macerated for 24 hours. Afterwards, they are de-stemmed and crushed. Fermentation and maceration occurrs in stainless steel deposits over eight days at a controlled temperature, after which the tanks are emptied and the skins pressed. The next step is malolactic fermentation before finally being filtered and bottled.

By sharing the know-how of 12 wineries within seven of the most important Spanish wine regions, Gran Sello encompasses the best of the Iberian Peninsula.
The wines show the expression of soil and climate, melded with intense aromas from the fruit, yielding the elegance and concentration of full fresh and well balanced flavours. The vineyards of Gran Sello are located to the southeast of Madrid. At an altitude of over 737 meters over the sea level, this region is considered cooler than the rest of Central Spain, which allows us to produce fresher wines. The Gran Sello family of wines have a common base: at least 70% of the blends are made with Spanish grape varieties

Hier haben Crianza, Reserva und Gran Reserva unterschiedliche Reifezeiten.Wenn der Wein zwar im Holz ausgebaut wurde, aber ohne die nötige Reifezeit für einen Crianza oder eine höhere Stufe zu erreichen, wird er schlicht als Roble betitelt.
Der Gebrauch amerikanischer Eiche führt zu deutlichen Holzaromen sowie dem Duft nach Vanille und Kokos. Der Ausbau eines klassischen Rioja dauert viele Jahre und lässt den Wein oxydieren, während moderner Ausbau, wie er in der Ribera del Duero bekannt geworden ist, auf Frucht, Schokolade und Vanille setzt. Grundsätzlich jedoch hat Rotwein aus Tempranillo den Vorteil, keine allzu hohen Alkoholwerte zu besitzen und trotz moderater Säure lebendig und frisch zu wirken. Im Alter kann der Wein balsamische Noten aufweisen und die präsenten Tannine werden samtig und rund. Als Rosado, also Roséwein ausgebaut, ist der Körper schlanke und der Charakter von Frische und Frucht geprägt.
Was macht den typischen Tempranillo aus?
Rotweine der Rebsorte Tempranillo haben einen fruchtigen Charakter, gefällige Tannine und eine gute Säurestruktur. Den elegant weichen Wein kommt in Spanien zumeist trinkreif auf den Market. Doch können die gereiften Crianza, Reserva und Gran Reserva Weine nach dem Kauf noch lange reifen. Typische Aromen sind Pflaume, Kirsche, Trockenobst, Tabak, Leder, Schokolade und Gewürze. Weine der Rebsorte Tempranillo passen zu Wild, Geflügel, Rind und Schwein. Ein klassischer Tempranillo, der ein guter Speisebegleiter ist, ist der Coronas Tempranillo der Familia Torres.
Der elegante Tempranillo Charakter
Um seine Eleganz und seinen Charakter zu erlangen, benötigt der Tempranillo ein eher frisches Klima. Für den Zuckergehalt und die tiefrote Farbe sind jedoch ausreichend Wärme und Sonne notwendig. Solche klimatischen Bedingungen herrschen in Idealform in den Höhenlagen der Ribera del Duero und der Rioja, wo die besten Tempranillo Weine erzeugt werden.
