The Craft of Brewing

The water – or liquor – is extracted from our chalk wells 200ft beneath the brewery. It’s amazing to think that we use the same liquor supply as the monks in Bury St. Edmund’s Great Abbey did 1,000 years ago. It was good enough for the Benedictine monks of St Edmund and it’s good enough for us! By adding extra mineral salts, we’re able to replicate brewing liquors from Abingdon, Nottingham and Essex.

Here in Suffolk, we’re lucky to have lots of sunshine and fertile soils. Much like the rest of the nearby East Anglian countryside, this area produces the best malting barley in the world. Malted barley contains sugars and when we ferment these using the yeast, we make alcohol. It’s also the malts that give the beer its fantastic colour.

It’s the hops that create each beer’s distinctive character – its bitter flavours and its individual aroma. They also act as a preservative and an antiseptic. Our hops mostly come from Kent, Herefordshire and Worcestershire. But we do use some international hops too – from as far away as Tasmania!

Finally, our magic ingredient is yeast. It’s the yeast which transforms the sugar to alcohol. There are several strains of yeast, each of which give a different characteristic to our beers. Did you know that we sell our excess yeast to Marmite? Love it or hate it, we don’t like to see anything go to waste!

Greene King Strong Suffolk Dark Ale is a beer that thanks is obtained mixing two beers, one reaches maturity fair and the other is aged in oak barrels where it gets aromas of grapes.

The result is a beer tan somewhat obscure creating in glass a layer of ephemeral white foam obtained, nose aromas of grape and oak obtained from beer aged in barrels, its flavor is intense with notes wood and caramel with a slight bitter end.

Greene King brew their diverse range of craft beers in the art-deco surrounds of the St Edmund’s Brewhouse in Bury St Edmunds, Suffolk, using over 25 varieties of hops including Cascade, Fuggles, East Kent Goldings, Galaxy and Williamette. The Brewhouse is named after the 9th Century Saxon ruler King Edmund of East Anglia, who, according to legend, the Vikings tortured and killed when he refused to renounce Christianity.

Greene King Strong Suffolk is made from a blend of two ales: Old 5X , which is brewed to the maximum strength possible (around 12% abv) and left to mature in 100-barrel oak vats for a minimum of two years; and BPA, a dark, full-bodied freshly brewed beer which is added just before bottling. Additional Notes: An easy drinking and refreshing IPA. Fresh dry hop, herbal character is provided by the mix of Admiral, Pilgrim and First Gold hops. The beer poors dark ruby red. the decent head has amedium retention. the taste has some wood, some plum and some melon, enriched with caramel and some orange peel. Strong does not refer to high alcohol but to a strong taste that pairs well with some cheese.
