The judgment? “Preheating the oven before putting the food in is usually only necessary for dishes that have to start with a certain heat,” says Claudia Sidoti, head chef at HelloFresh.

And what are such foods? Here, Sidoti and Ian Rynecki, executive chef at Pippin Hill Farm & Vineyards in Charlottesville, Virginia, explain it all.

Let’s start with the food that sparked this whole debate: vegetables. While exact oven temperature isn’t as important with vegetables compared to other dishes (more on that later), it’s still a good idea to fully preheat your oven before plugging in your produce tray, says Ryneck. “Other chefs may disagree,” he notes, “but this is my recommendation if you want the best flavor outcome.”

He even goes one step further. “I would also put the tray in the oven during preheating,” says Rynecki. Then, when the oven has reached the right temperature, “pull out the pan, pour in the veggies and hear it sizzling.” The hot pan quickly raises the temperature of the veggies, which ultimately helps them caramelize better . That’s important because “the caramelization is the flavor,” he explains. While my trick of sticking the veggies in while the oven is still heating certainly saved me some time, Rynecki confirms, it came at the expense of flavor. Time vs taste… sounds like I have my next topic of discussion in the middle of the shower.

Anything with eggs — like strattas, frittatas, quiches, and so on — warrants a preheated oven, Rynecki says. Just like you wouldn’t hard boil an egg in cold water, you don’t want to put a baked egg dish in a cold oven. The reason baked eggs need a high starting temperature: “A low temperature at the beginning doesn’t allow for fluffiness,” says Rynecki. A baked egg dish without fluff? No, just no.

Bread is another example of foods that require a properly preheated oven. When you put bread dough in a preheated oven, that quick burst of heat helps complete the yeast process, says Rynecki. Putting bread dough in a cold oven that’s gradually heating up yields bread that’s still edible, but not as tasty as it could be, he says. A fully preheated oven provides the “last 5 percent” that can make good bread great.

And generally speaking, anything that needs to rise — bread, biscuits, egg dishes, etc. — needs a fully preheated oven, says Rynecki. So put on your patient pants when trying recipes like this.

All forms of pastry should be placed in the oven when — and only when — it’s at the exact required temperature, Rynecki says. This is because these products rely on an initial burst of heat to cook them evenly and whip them properly too.

Take cookies for example. If you put a sheet of cookie dough in an oven that’s not yet hot, the bottoms will burn before the tops are fully cooked because the heat didn’t hit them evenly and instead came slowly from the bottom, Rynecki explains. A burnt but sticky cookie sounds both awful and downright confusing.

As another disturbing example, consider cookies. “If you put something like biscuits in a colder oven, they come out flat and dry,” Sidoti says. That sounds (almost) worse than the botched biscuits.

In general, roasts that are going to be in the oven for long periods of time and at low temperatures (eg, 310 degrees and below) don’t need to be preheated, says Rynecki, because the cooking process is more about “low and slow.” than to deliver a fast, hot blast. Instead, keep your oven window clean so you can monitor the condition of your food from the outside.

Another tip: Consider buying a thermometer to put in your oven, especially if you have an older oven like the old oven that’s in my kitchen. Why? Over time, many ovens lose their ability to calibrate temperature, which means the temperature you program your oven to may not reflect the actual temperature inside.

For example, you can set your oven to 350 degrees, but it will only go up to 325 degrees. This can make a world of difference in the quality of your cooking and baking, especially with dishes that require very specific temperatures like the baked goods, bread and egg dishes mentioned above. Can I cook my own recipes?

Yes. Anything that can be cooked in a conventional oven can be cooked in the Viking Professional Speedcook Oven. If you can’t find an exact setting for your item, use the setting for a similar item.

Does the oven turn off automatically when it’s done? What if I forget to turn it off?

The oven does not switch off automatically. In the Speedcook oven, the cooking elements turn off at the end of the cooking cycle. However, the oven will maintain its current cooking temperature until it is turned off or a different cooking setting is selected. The bottom oven (double wall model) stays at its set temperature like any other conventional oven until you turn it off.

Can changes to a pre-programmed setting be saved? Are customizations saved automatically?

To save adjustments permanently, you must save the cooking settings in Favorites (page 28)*. Customizations are not saved automatically.

What is the difference between Bake and Roast?
