While exact oven temperature isn’t as important with vegetables compared to other dishes (more on that later), it’s still a good idea to fully preheat your oven before plugging in your produce tray, says Ryneck. “Other chefs may disagree,” he notes, “but this is my recommendation if you want the best flavor outcome.”
He even goes one step further. “I would also put the tray in the oven during preheating,” says Rynecki. Then, when the oven has reached the right temperature, “pull out the pan, pour in the veggies and hear it sizzling.” The hot pan quickly raises the temperature of the veggies, which ultimately helps them caramelize better . That’s important because “the caramelization is the flavor,” he explains. Take cookies for example. Can I cook my own recipes?
Yes. Anything that can be cooked in a conventional oven can be cooked in the Viking Professional Speedcook Oven. If you can’t find an exact setting for your item, use the setting for a similar item.
Does the oven turn off automatically when it’s done? What if I forget to turn it off?
The oven does not switch off automatically. In the Speedcook oven, the cooking elements turn off at the end of the cooking cycle. However, the oven will maintain its current cooking temperature until it is turned off or a different cooking setting is selected. The bottom oven (double wall model) stays at its set temperature like any other conventional oven until you turn it off.
Can changes to a pre-programmed setting be saved? Are customizations saved automatically?
To save adjustments permanently, you must save the cooking settings in Favorites (page 28)*. Customizations are not saved automatically.
What is the difference between Bake and Roast?
Both when baking and roasting, the food is enveloped in hot, dry air. However, in baking mode, the heated air only comes from the bottom of the oven. In the frying mode, air is supplied from above and below.
How do I know which Speedcook mode to use?
The modes have been named to describe how you would normally cook a product – i.e. H. BAKING a cake or ROASTING a turkey. As an additional aid in locating an item, an alphabetical list of all pre-programmed cooking settings is supplied with your oven.

This takes 8-14 minutes depending on the cooking temperature that the oven needs to reach. As with any standard convection oven, the bottom oven (double wall model) should be given time to preheat.
Do I have to close the door to use grill mode?
It is highly recommended to close the door to retain the heat in the oven when using the bottom (double wall) oven grill mode. The door must be closed to use Broil Speedcook mode.
How can I tell if the oven door is completely closed?
When the Speedcook oven door is opened, the oven will display the message “The Speedcook door is open, please close to continue”. The oven will stop cooking or preheating until the door is properly closed. The bottom oven runs regardless of whether the door is open or not. When you feel the door latch click into the oven frame, you know the door is closed.
What if I can’t fi nd my specific recipe?
If you cannot find an exact setting for your dish, use the pre-programmed setting for a dish similar to the one you want to cook. At the point “100% complete” (pages 30-31)* you have the opportunity to make adjustments to your article. Once you have developed the settings for your specific Element, you can save them to Favorites (page 28) for easy recall.
If I change pre-programmed settings, will that affect the original settings? Can I get the originals back?
Adjustments made to a pre-programmed setting apply only to that specific cook cycle and any subsequent cook cycles initiated by the Repeat Cook option. The oven will default to the original pre-programmed settings the next time the item is selected unless the customized settings are saved in Favourites. Saving a customized setting to Favorites (page 28)* creates a copy of the original that you can modify and rename. The original setting is not changed.
If the settings in the Speedcook oven are pre-programmed, why do I need to check my food at 80% done?
Because everyone’s food preferences are slightly different, the 80% complete score will help ensure your food is cooked exactly how you want it. However, if you don’t want to check your food at the 80% point, select “Continue Cooking” or just select nothing. After 20 seconds of no selection, the cooking cycle will continue according to the pre-programmed settings.
