1 poblano chili
3 tablespoons neutral oil, divided
1 medium onion, chopped
Kosher salt and freshly ground black pepper

1/2 teaspoon smoked chili powder (such as ancho chili powder or smoked paprika powder)
1/4 cup crumbled feta cheese
2 tablespoons coriander, finely chopped
1 lime, quartered
method
Fill a stockpot with cold water and soak the corn for at least 10 minutes. Meanwhile, preheat the grill to medium-high. Remove corn from pot and drain excess water. Grill, turning frequently, until pods begin to singe and corn is tender, 10-12 minutes. Remove corn from grill and let cool.

Heat oil in a medium saucepan over medium-high heat and sauté onion, seasoned with salt and pepper, until translucent, 5-7 minutes, stirring occasionally. Add garlic and cook until fragrant, about 1 minute longer. Add the broth, remaining corn kernels, and chopped poblano and simmer for 10 minutes. Remove from the heat and stir in 2 tbsp. Sour cream. Adjust the seasonings and divide the soup between the bowls.
Combine the remaining 2 tbsp. sour cream and chili powder. Garnish each soup bowl with a dollop of the sour cream mixture, 1 tbsp. Cheese, cilantro and lime wedges.
