It is possible to get a pretty good black royal icing without using black food coloring by mixing equal parts red, green and blue. After many tries I’ve finally found the best recipe to make black royal icing that doesn’t taste terrible and is really black! The right food coloring and some cocoa powder will help. But we’ll show you how to do it without black food coloring.

If you’ve ever tried making black royal icing, you’ve probably noticed that it takes LOTS of black food coloring to get the right color.

And even then, the glaze is mostly dark gray rather than actually black.

Then when you finally get it to the right color, it tastes awful! (Black food coloring has a bitter taste that just isn’t very appealing.)

And sometimes it “bleeds”. This means the black will seep into the other frosting colors you have on your cookie and destroy them.

Or worse…it never dries.

So I set out to find the best way to make black royal icing. (Hard to decorate cut out Halloween cookies without them!)

The first exam

After scouring the internet, I found 3 common food coloring options for black:

Wilton Black*

AmeriColor Super Black*

Red, Green, and Blue Mix #1: Black, made by mixing 1/2 tsp blue gel food coloring with 1 1/4 tsp green gel food coloring and 3/4 tsp red gel food coloring (I used the gel Food coloring used by Betty Crocker is available at most grocery stores)

And there were two different ways to mix them:

into plain white royal icing

in brown royal icing made from cocoa powder

So that was a total of 6 different tests.

I started by mixing 1/32 teaspoon of each color into about 1 tablespoon of white royal icing. Then do the same for 1 tablespoon of brown (cocoa powder) royal icing.

But that clearly wouldn’t make the color cut. None of them came out black.

So I increased all of them to 1/16 teaspoon color in 1 tablespoon glaze.

I then covered all the shells with plastic wrap and let them sit for about 6 hours so I could get a better idea of ​​what the final color result would be.

The results

And this is what they looked like.

As you can see, in white glaze, the Wilton black was blue-grey rather than black.

The Wilton black in cocoa powder glaze looked much closer to black but still had a tan-grey appearance.

The AmeriColor Super Black* was very close to black in both the white and cocoa powder icings.

You can’t really tell much of a difference from the picture, but in person, the cocoa powder version was more of a warm black, while the white frosting was a cooler black.

The icing mixed with blue, green and red was nowhere near black.

It was brown. A really pretty dark brown (another color that’s hard to come by with royal icing). But not usable as black.

The re-test

Since only the AmeriColor Super Black food coloring passed the original test, I decided to go back to the drawing board and see what it takes to get a usable black color out of the other two.

For this test I still used 1 tablespoon white royal icing and 1 tablespoon cocoa powder royal icing with the following changes:

Wilton Black (More): I increased the amount of Wilton Black food coloring to 1/8 teaspoon

Red, Green, and Blue Mix #2: I used equal parts green, blue, and red Betty Crocker gel food coloring for the mixed black (I used 1/2 teaspoon each in my case). I had to add 1/4 teaspoon of the final product to the frosting to get the results in the picture.

As you can see, both have been much more successful in the color department. You look pretty black.

I probably could have added a little more red to the blue/green/red mix #2 with white icing as it has a slight green cast to it. But it would still look black for most cookie decorating scenarios.

However, in both cases I had to use so much food coloring that it spoiled the flavor of the frosting:

1/8 teaspoon Wilton black food coloring per tablespoon of glaze

1/4 teaspoon Betty Crocker Red/Green/Blue mix per tablespoon of glaze

It’s not ideal, but it works if that happens to be the food coloring you have on hand.

Tips for the best Black Royal Icing

With all that said, here are my tips for making the best black frosting:

Use as little black food coloring as possible to avoid many of the problems — the bitter taste, color bleeding, and not drying properly. So that’s the goal.

Add cocoa powder to the frosting before mixing in black gel food coloring to get a rich black color and use less color. It gives the glaze a chocolate flavor. Not a bad thing in my books, but some people might not like it (or might be allergic to it).

There is a difference in the type of food coloring used. AmeriColor Super Black* had the best black color and required the least amount of dye to achieve that color.

It’s possible to get a pretty good black royal icing without using black food coloring by mixing equal parts red, green, and blue.

Regardless of how you make the icing, the color will darken as it dries. Leaving it overnight after blending will give you a better idea of ​​what it will look like.

The best ingredients for Black Royal Icing

4 cups powdered sugar

3 tablespoons meringue powder

1/2 cup water

1/3 cup cocoa powder (optional) – Dutch cocoa powder works best as it’s a darker color than regular cocoa powder. But any cocoa powder is better than none at all.

AmeriColor Black Gel Food Coloring – You will likely need between 2 and 4 teaspoons to color the entire batch of frosting black (1/2 to 1 teaspoon per cup of frosting).

How to make black royal icing with cocoa powder

The best option (in my opinion) is to add cocoa powder to your glaze.

Which makes the icing brown. And brown is closer to black than white, so you need less food coloring.

Place the powdered sugar, cocoa powder and meringue powder in the blender and beat on low speed for a few seconds to remove any lumps.

Add the water and mix on low speed until combined.

Increase mixer speed to medium-low and mix until glaze forms soft peaks, 3 to 5 minutes.

Test the icing consistency

Test the glaze to make sure it’s the right consistency.

To do this, run a knife through the glaze.

If it takes less than 10 seconds for the gap to close, your icing is too thin. Beat it a little more to make it thicker.

If it takes more than 20 seconds for the gap to close, your frosting is too thick. Add a few drops of water and mix briefly.

Repeat the testing process until the glaze is the right consistency.

Add the black food coloring

If you’re using the whole batch for black icing, you can add the black food coloring directly to your bowl.

Otherwise, spoon the icing you want to turn black into a smaller bowl. Since it’s very difficult to make two batches of icing with the exact same color, make sure you use enough to decorate all of your cookies.

Then add a small amount of black gel glaze and mix by hand.

If it still looks like a light gray try adding some more black gel.

But not too much! Keep in mind that it will darken as it dries.

Depending on the size of your cookies and how much frosting you use on each, this recipe should cover about 24 2-inch cookies.

How to make a small batch of black royal icing

If you don’t need a whole batch of black icing, you can add the cocoa powder to white royal icing after mixing.

Mix the glaze according to the directions above, without the cocoa powder. (Or use your own royal icing recipe).

Then put some of the white glaze in a separate bowl.

Add 2 to 4 teaspoons of cocoa powder per cup of white icing and mix thoroughly.

Gradually add the black gel food coloring until you get a darker gray color.

If the frosting is too thick, add a few drops of water to thin it down to your desired consistency.

As with the large batch of icing, let it sit overnight if you want to get a better idea of ​​how dark it gets. Cover it with plastic wrap touching the surface of the frosting to keep it from drying out.

How to make Black Royal Icing without cocoa powder

If you don’t want to use cocoa powder as the base for your black icing, you can omit it from the recipe above. Follow the directions above but increase the mixing time to 5 to 8 minutes.

You’ll also need to add more black gel food coloring to get black icing.

I found that AmeriColor Black Gel Food Coloring produces the darkest color with the least amount of food coloring.

Wilton black gel food coloring works if you have it on hand. But to make the frosting dark enough, you have to add a lot of it (about 2 teaspoons per cup of frosting in my test), and you’ll end up with a frosting that tastes bitter.

Gradually add the food coloring, mixing well after each addition.

Continue until your icing is a dark gray color.

At a certain point, you’ll find that adding more food coloring doesn’t change the color of the frosting very much.

Stop adding more at this point. It won’t darken your frosting, but it will add more bitter flavor.

Leave the glaze to rest

If you have time, leave the frosting overnight to allow the black color to set. That way you can see how dark it is (and add a little more color if needed).

To ensure the icing doesn’t dry out, cover with plastic wrap. Then press down on the plastic so that it is directly touching the icing and there are no air bubbles.

In this way it can be stored at room temperature for a few days.

If it looks like it has separated when you use it, this is normal. Just give it a little stir to combine the layers back together.

What if you don’t have black food coloring?

If you don’t have black food coloring, you can mix some other colors together to make your own version.

It’s hard to get true black this way, but it will work in a pinch. And can be used with or without cocoa powder.

In a small bowl, combine equal parts blue gel food coloring, green gel food coloring, and red gel food coloring. I used 1/2 teaspoon each.

To test the color, use a toothpick to spread a little of it on a piece of paper.

Adjust by adding a little more blue, red, or green if needed.

Then follow the same directions (from above) to add your homemade black food coloring to the frosting.

How to store Black Royal Icing

If you want a light shade of black that’s almost like a dark gray color, then this is the method for you! With these two colors you can create a light black without using white.

The magic of this color combination lies in the complementarity of these two shades. Because each of these shades is so bright and vibrant, they neutralize each other very well. The vibrant pthalo blue offsets the vibrancy of the cadmium orange and vice versa. The last shade is a neutral and light brown light black color. This black is perfect for those looking to add shadows or for those who don’t want a very dark shade of black.

After many tries I’ve finally found the best recipe to make black royal icing that doesn’t taste terrible and is really black! The right food coloring and some cocoa powder will help. But we’ll show you how to do it without black food coloring.

If you’ve ever tried making black royal icing, you’ve probably noticed that it takes LOTS of black food coloring to get the right color.

And even then, the glaze is mostly dark gray rather than actually black.

Then when you finally get it to the right color, it tastes awful! (Black food coloring has a bitter taste that just isn’t very appealing.)

And sometimes it “bleeds”. This means the black will seep into the other frosting colors you have on your cookie and destroy them.

Or worse…it never dries.

So I set out to find the best way to make black royal icing. (Hard to decorate cut out Halloween cookies without them!)

The first exam

After scouring the internet, I found 3 common food coloring options for black:

Wilton Black*

AmeriColor Super Black*

Red, Green, and Blue Mix #1: Black, made by mixing 1/2 tsp blue gel food coloring with 1 1/4 tsp green gel food coloring and 3/4 tsp red gel food coloring (I used the gel Food coloring used by Betty Crocker is available at most grocery stores)

And there were two different ways to mix them:

into plain white royal icing

in brown royal icing made from cocoa powder

So that was a total of 6 different tests.

I started by mixing 1/32 teaspoon of each color into about 1 tablespoon of white royal icing. Then do the same for 1 tablespoon of brown (cocoa powder) royal icing.

But that clearly wouldn’t make the color cut. None of them came out black.

So I increased all of them to 1/16 teaspoon color in 1 tablespoon glaze.

I then covered all the shells with plastic wrap and let them sit for about 6 hours so I could get a better idea of ​​what the final color result would be.

The results

And this is what they looked like.

As you can see, in white glaze, the Wilton black was blue-grey rather than black.

The Wilton black in cocoa powder glaze looked much closer to black but still had a tan-grey appearance.

The AmeriColor Super Black* was very close to black in both the white and cocoa powder icings.

You can’t really tell much of a difference from the picture, but in person, the cocoa powder version was more of a warm black, while the white frosting was a cooler black.

The icing mixed with blue, green and red was nowhere near black.

It was brown. A really pretty dark brown (another color that’s hard to come by with royal icing). But not usable as black.

The re-test

Since only the AmeriColor Super Black food coloring passed the original test, I decided to go back to the drawing board and see what it takes to get a usable black color out of the other two.

For this test I still used 1 tablespoon white royal icing and 1 tablespoon cocoa powder royal icing with the following changes:

Wilton Black (More): I increased the amount of Wilton Black food coloring to 1/8 teaspoon

Red, Green, and Blue Mix #2: I used equal parts green, blue, and red Betty Crocker gel food coloring for the mixed black (I used 1/2 teaspoon each in my case). I had to add 1/4 teaspoon of the final product to the frosting to get the results in the picture.

As you can see, both have been much more successful in the color department. You look pretty black.

I probably could have added a little more red to the blue/green/red mix #2 with white icing as it has a slight green cast to it. But it would still look black for most cookie decorating scenarios.

However, in both cases I had to use so much food coloring that it spoiled the flavor of the frosting:

1/8 teaspoon Wilton black food coloring per tablespoon of glaze

1/4 teaspoon Betty Crocker Red/Green/Blue mix per tablespoon of glaze

It’s not ideal, but it works if that happens to be the food coloring you have on hand.

Tips for the best Black Royal Icing

With all that said, here are my tips for making the best black frosting:

Use as little black food coloring as possible to avoid many of the problems — the bitter taste, color bleeding, and not drying properly. So that’s the goal.

Add cocoa powder to the frosting before mixing in black gel food coloring to get a rich black color and use less color. It gives the glaze a chocolate flavor. Not a bad thing in my books, but some people might not like it (or might be allergic to it).

There is a difference in the type of food coloring used. AmeriColor Super Black* had the best black color and required the least amount of dye to achieve that color.

It’s possible to get a pretty good black royal icing without using black food coloring by mixing equal parts red, green, and blue.

Regardless of how you make the icing, the color will darken as it dries. Leaving it overnight after blending will give you a better idea of ​​what it will look like.

The best ingredients for Black Royal Icing

4 cups powdered sugar

3 tablespoons meringue powder

1/2 cup water

1/3 cup cocoa powder (optional) – Dutch cocoa powder works best as it’s a darker color than regular cocoa powder. But any cocoa powder is better than none at all.

How to make black royal icing with cocoa powder

The best option (in my opinion) is to add cocoa powder to your glaze.

Which makes the icing brown. And brown is closer to black than white, so you need less food coloring.

Place the powdered sugar, cocoa powder and meringue powder in the blender and beat on low speed for a few seconds to remove any lumps.

Add the water and mix on low speed until combined.

Increase mixer speed to medium-low and mix until glaze forms soft peaks, 3 to 5 minutes.

Test the icing consistency

Test the glaze to make sure it’s the right consistency.

To do this, run a knife through the glaze.

If it takes less than 10 seconds for the gap to close, your frosting is too thin. Beat it a little more to make it thicker.

If it takes more than 20 seconds for the gap to close, your icing is too thick. Add a few drops of water and mix briefly.

Repeat the testing process until the glaze is the right consistency.

Add the black food coloring

If you’re using the whole batch for black icing, you can add the black food coloring directly to your bowl.

Otherwise, spoon the icing you want to turn black into a smaller bowl. Since it’s very difficult to make two batches of icing with the exact same color, make sure you use enough to decorate all of your cookies.

Then add a small amount of black gel glaze and mix by hand.

If it still looks like a light gray try adding some more black gel.

But not too much! Keep in mind that it will darken as it dries.

Depending on the size of your cookies and how much frosting you use on each, this recipe should cover about 24 2-inch cookies.

How to make a small batch of black royal icing

If you don’t need a whole batch of black icing, you can add the cocoa powder to white royal icing after mixing.

Mix the glaze according to the directions above, without the cocoa powder. (Or use your own royal icing recipe).

Then put some of the white glaze in a separate bowl.

Add 2 to 4 teaspoons of cocoa powder per cup of white icing and mix thoroughly.

Gradually add the black gel food coloring until you get a darker gray color.

If the frosting is too thick, add a few drops of water to thin it down to your desired consistency.

As with the large batch of icing, let it sit overnight if you want to get a better idea of ​​how dark it gets. Cover it with plastic wrap touching the surface of the frosting to keep it from drying out.

How to make Black Royal Icing without cocoa powder

If you don’t want to use cocoa powder as the base for your black icing, you can omit it from the recipe above. Follow the directions above but increase the mixing time to 5 to 8 minutes.

You’ll also need to add more black gel food coloring to get black icing.

I found that AmeriColor Black Gel Food Coloring produces the darkest color with the least amount of food coloring.

Wilton black gel food coloring works if you have it on hand. But to make the frosting dark enough, you have to add a lot of it (about 2 teaspoons per cup of frosting in my test), and you’ll end up with a frosting that tastes bitter.

Gradually add the food coloring, mixing well after each addition.

Continue until your icing is a dark gray color.

At a certain point, you’ll find that adding more food coloring doesn’t change the color of the frosting very much.

Stop adding more at this point. It won’t darken your frosting, but it will add more bitter flavor.

Leave the glaze to rest

If you have time, leave the frosting overnight to allow the black color to set. That way you can see how dark it is (and add a little more color if needed).

To ensure the icing doesn’t dry out, cover with plastic wrap. Then press down on the plastic so that it is directly touching the icing and there are no air bubbles.

In this way it can be stored at room temperature for a few days.

If it looks like it has separated when you use it, this is normal. Just give it a little stir to combine the layers back together.

If you don’t have black food coloring, you can mix some other colors together to make your own version.

It’s hard to get true black this way, but it will work in a pinch. And can be used with or without cocoa powder.
