“Cucumber what?” That was my reaction when I first heard about Pickleback. The drink, a shot of bourbon or Jameson Irish whiskey followed by a shot of pickle, has developed a cult following. It started out as particularly popular with bartenders in New York City, who then spread pickle fever to other cities, including Baltimore, Philadelphia, San Francisco, and even London.

It’s not that crazy when you put it in context. Russian and Nordic cultures have paired pickles and pickle brine with vodka for generations. I’ve been blending the sheets of various pickles for my Bloody Elixir for years. And of course, many martini drinkers add a drizzle of olive brine to their cocktails.

After much research – and lots of recording – I traced the origins of the pickleback back to the Bushwick Country Club in Brooklyn. In 2006, neighbor McClure’s Pickles asked to store some supplies in the bar’s basement. The country club’s bartenders also used the brand’s brine in some cocktails. One Sunday night, a customer asked for a shot of pickle juice with her vodka, according to owner John Roberts. The order inspired bartender Reggie Cunningham to jokingly pair Old Crow Bourbon with a shot of McClure’s tangy pickle juice instead of the traditional can of Pabst Blue Ribbon lager. But the reaction from patrons was no joke, and the bar began selling many of them.

When the Ruotolo brothers brought the drink to their Whiskey Town bar in the East Village, the recipe changed slightly, with Jameson replacing bourbon as the whiskey shot of choice. The salty creation was soon being served at other bars, including the now-closed Randolph and Rusty Knot. It can now be found far and wide.

While bartenders use all manner of pickle juices, Roberts remains a traditionalist. “If it’s not McClure’s, it’s not the same,” he says.

My typical Saturday nights started right out of college in 2003, playing pre-game games with my roommates. I watched a few episodes of “Fear Factor,” put on my best “go out” button, and wandered off to a row of meat market bars in Manhattan’s Murray Hill neighborhood. The speakers would blare whatever Lil Jon-produced song was popular that week, and I’d order Vodka Red Bulls for $10 a pop — a small price for a whole night of fake bragging rights.

I wasn’t a runaway. In the early days, Red Bull vodka was also the drink of choice for hipsters dancing to the Peaches and Bloc party; Manhattan-based bankers, brokers, and attorneys; even Prince Harry, who enjoyed it at upmarket bottle service clubs in South Kensington. While it’s universally derided by the same night-dwellers today, you’ll have a hard time finding a cocktail that’s been more consumed — and more controversial — over the past 20 years.

It’s almost impossible to figure out who was the first genius to combine vodka and the world’s most popular energy drink. That doesn’t mean people haven’t tried to get credit for it. Even the trail of Wikipedia revisions shows dueling editors trying to get their uncited claims into official records. (The current incarnation credits “futurologist” Benjamin Reed, but there’s no information to back that up.) Since Austrian entrepreneur Dietrich Mateschitz’s introduction of Red Bull in 1987, “it’s been mixed with alcohol by night owls who drank on dullness was exhaustion,” noted Frank Bruni, former New York Times food critic.

First sold in upscale Austrian ski resorts, the brand sought to associate itself with extreme sports by sponsoring the 1988 Dolomitenmann – an Ironman-like event featuring paragliding and kayaking. An idea began to take root that playing harder, then studying harder, and of course partying harder, might help.

The drink initially struggled when it came to the United States in 1997. The North American marketing team explored all possible avenues and saw an opportunity in San Francisco’s rave and club scene, recalls party promoter Vlad Cood. As his friends Christopher and Carlton Solle were preparing to open a tiny “party” bar called Butter in the SoMa neighborhood in 1999, he introduced them to Red Bull officials; The brand, in turn, offered the duo $50,000 to feature their product on the menu.

“They all got drunk and creative and came up with these fun drinks, sort of trashy,” recalls Cood. “All blenders came out of cans. dr Pepper, Squirt…SunnyD, Tang” and had evocative names like Prom Night Punch and the Bitchin’ Camaro. The most popular drink was the R.V. (which stands for “Red Bull Vodka”). For eight bucks, you get a whole 8-ounce Red Bull mixed with 2-ounce Svedka, slammed together by the bar’s self-proclaimed “toxicologists” and served in a 16-ounce glass mason jar over ice.

“Due to Red Bull’s investment in branding the drink, it’s been pushed a lot all along and established it as Butter’s signature drink,” explains Cood. He claims it spread outward from there, largely because top San Francisco promoters all had a connection to butter — whether they were investors themselves or bar regulars.

“Without Butter’s place and role in the community, it’s unlikely that R.V. would have been blown up like that,” believes Cood. “That’s why Red Bull bought in. To get to bed with the scene.”

While Butter moved on to making it R.V. A number of other, more imaginative names—Vod Bull, Raging Bull, Speedball, Liquid Cocaine, and Heart Attack Special, to name a few—flourished but never quite caught on. Eventually it became known simply as Vodka Red Bull or Red Bull Vodka.

There was, of course, some cognitive dissonance at play, as Red Bull’s cans clearly said, “Not recommended…for mixing with alcohol.” That didn’t mean the company would ignore the emerging phenomenon. As Jim Bailey, former marketing vice president of Red Bull Canada, lightly noted in a 2005 interview, “How the consumer adapts or interprets the product is in their hands.” Red Bull eschewed traditional advertising — and never officially promoted the idea to pair it with alcohol — and instead hired unpaid student brand managers and gave them boxes to distribute around campus. The students could do whatever they wanted with it. (Red Bull still refuses to acknowledge the drink and declined to comment on this story.)

During the first half of the decade, an order for a vodka Red Bull was just as likely to be heard as an order for rum and coke or jack and ginger. It wasn’t just in bars and fraternity houses, either; You could find the drink just as easily in a crunchy Irish pub as you could in an upscale golf clubhouse or nightclub. Any type of drinking establishment had the ability to prepare the drink and did so willingly.

It’s the rare cocktail where the mixer costs more than the spirit, allowing for larger premiums over, say, a vodka soda. “We called it ‘liquid gold,'” notes Cood. Costing about $3 a can at the time, it was so expensive that Eric “ET” Tecosky, a longtime Los Angeles bartender who worked at Club LUSH in its early years, claims it was a felony for employees to be caught drinking to become during their shift.

TGI Friday’s soon took the drink and cleverly paired it with the “It” drink from the previous era, Sex on the Beach. The “Diddy on the Beach” offered vodka and Red Bull as well as Malibu rum and assorted fruits. Dave & Buster’s began offering a full vodka Red Bull menu, with flavors such as Red Bull Sugarfree and Absolut and Red Bull Yellow Edition (“Tropical”) with mango vodka. Similarly, Red Bull impersonators began infiltrating the bar scene. There was the Roaring Lion, which hooked up to the soda gun and was 60 percent cheaper than Red Bull. And Rockstar, which came out in 2001 in 16-ounce cans (twice the size of Red Bull) and ” “liver-rejuvenating” milk thistle along with the same dose of caffeine.

But if these were the halcyon days of energy and ethanol, there was a darker side to the era. As early as 2001, fears of the drink causing deaths were growing: “Red Bull cocktails give you wings and send some to the skies,” headlined the Sunday Times. Though much of the alarmism was unproven, the cocktail also spawned two decades of peer-reviewed articles with titles like “The Effect of Energy Drinks on the Urge to Drink Alcohol in Young Adults.” While the fear of cardiac arrest on the dance floor didn’t deter many drinkers, eventually something else did: the rise of the bro.

As the 2000s drew to a close, ordering a vodka Red Bull came with a scarlet letter. Google the drink’s name with “Frat” and you’ll get plenty of results associating it with college campuses and the variations popular there, like “The Snorkel” or “Y Bomb” (the drink with the shotgun) . A 2011 article on “Jersey Shore Cocktail Recipes” also features a Grenade Launcher, a riff on the Jägerbomb where you toss a shot glass of Jägermeister into a glass of Red Bull and chug. It was widely believed that only Bros (or Snooki) drank Vodka Red Bull.

But the drink continues. Having survived a burgeoning industry of now-banned canned alcoholic energy drinks (Sparks, Four Loko), it’s still available almost anywhere you can get a drink. However, there’s no denying that it’s been relegated to where we hide all the bad stuff from the early days of the new millennium, from Frosted Tips to “My Humps”.

At Butter, however, the Red Bull logo still hangs proudly on the bar’s exterior clapboard and the R.V. still selling solidly nearly 20 years later. Like walking into the Mission and getting a burrito at La Taqueria or returning an Anchor Steam at Swan Oyster Depot, it’s become a San Francisco tradition. “They don’t drink it here because it’s ironic,” notes Cood, who took the lead in 2009. “You drink it because it’s iconic.”
