Place each ball of dough between 2 pieces of parchment paper and roll out 1/4 inch thick. Store sheets of dough between parchment and place on a baking sheet or cutting board in the refrigerator. Chill for 15 minutes. Use a larger cutter to cut out your cookies. Remove any scraps of dough from around the cookies and place the cookies on a baking sheet lined with parchment paper. Then use a smaller cutter to cut out the center of the cookies. If necessary, use a toothpick to remove the center. If you want your cookies to be ornaments, make a hole in each cookie by pushing a drinking straw or the tip of a chopstick through the dough where you want to hang it. Make sure the dough area is thick enough not to break. Divide candy into resealable bags by color. Squeeze out the air, close the bags, and hit with a meat mallet, rolling pin, or the back of a metal measuring cup to mash candy. Carefully place the crushed candies into the recesses of the biscuits. Try to use complementary colors (like half blue and half green) when mixing. Place the baking sheet in the refrigerator for 10 minutes while preheating the oven to 350°F. Press the leftover dough into a ball. Roll out the dough again between baking paper and chill. Take a tray of prepared cookies out of the fridge and place the cookie tray on the middle rack of the oven. Bake the cookies at 350°F for 10-12 minutes until the candy is melted and the edges of the cookies are just golden. Remove the cookies from the oven and leave on the baking sheets until completely cool, then carefully remove. You can eat the cookies now or make ornaments by stringing a ribbon through each hole.

Use a dough that won’t spread: If you decide to use a different sugar cookie dough, be sure to stick with one that won’t spread when baked. The cookies need to keep their shape.

Chill Your Dough: Chilling your dough will help the stained glass cookies hold their shape. Some people chill the dough before rolling. I prefer to roll it first and then chill it before slicing.

I also like to chill the cookies for about 15 minutes before popping them in the oven because they can warm up quite a bit while you’re filling them with shredded Jolly Ranchers.

Crush Jolly Ranchers: Some people put whole Jolly Ranchers in their glass cookies. Other people pulverize them into a complete powder in a food processor. I find that all the Jolly Ranchers can overflow at times and powdered ones aren’t necessary.

Just crush the Jolly Ranchers into bags and you’ll be fine. Some larger chunks are fine, and some powder is fine.
