First of all, why does food become stale? It has to do with moisture – both too much and too little affect quality.
“Staleness of bread products is caused by moisture loss. Or in humid environments where crunchy products are stored, sometimes even the absorption of moisture causes a product to become stale,” DeFrates told SheKnows.

They indicate when “the food has reached its highest quality and best flavor, but they are not an exact science and consumers should be aware of potential inconsistencies when considering whether to eat or discard a particular food.”
Maya Feller, MS, RD, CDN, a registered dietitian and nutritionist based in Brooklyn, says Bustle advises caution. “As a rule of thumb, people with a compromised immune system should not eat food past the sell-by date, especially if it’s visibly spoiled or foul-smelling.” She also advises against ever eating meat, poultry or seafood past the sell-by date.
However, when it comes to eating other foods that the label says have expired, the most important thing is to use your common sense. If an item smells horribly or is visibly soiled, Feller suggests composting it rather than risking eating it. The same applies if the texture, consistency or color of the item has changed. For products that do not come with a simple best before date, it is still possible, albeit with much more effort, to determine the rotation period for that specific product. For a processor to move their product in interstate commerce, it must have a packing code. This allows them to easily track their product for stock turnover purposes and in the event of a recall. These packaging codes usually consist of a series of letters and numbers indicating the date, time and sometimes place of manufacture. This data is not consumption data, but rather the time when the container was actually filled. Not really intended for general public knowledge, these codes are often unique to a particular processor and not widely released by them.
It is possible to get the keys to these codes by contacting the processor and asking how to decipher the dating code for specific product lines. Readers have done this over time, and the following code keys have been sent to me.
Obviously these are just a few of the many, many products that use Closed Dating and I hope future readers will continue to send in these codes as the processors fetch them. Honestly, when it comes to potentially dozens of products whose packaging codes would need to be deciphered, the whole process is a major hassle. While having an encrypted date is better than not having one at all, it would be far better if processors only used clear overt dates and (best used by) so we wouldn’t have to carry a book of code keys like undercover agents each time we go to the grocery store. To derive the month and day, divide the last three digits by 50 (604 / 50 = 6, leaving 4). The six indicates the last whole or complete month before the month of production, January, February, March, April, May and then June.
The next month, July, is the production month. The remaining 4 is the day it was produced. Therefore, a packing code of 3604 means that the product was packed on July 4th, 1998. Although not as accurate, you can save a lot of time by just looking up the year. The last three digits, representing the day and month, increase in size as the year progresses.
