Anyone who’s been halfway around the block knows about In-N-Out’s secret menu, which gives you a few custom options other than the regular hamburger, cheeseburger, fries, shakes, and double-double that appear on their printed menus . But the options don’t stop there.
Before I ever set foot in the store, I scoured the internet and finally came across the Davis County Wiki, which has an entire user-generated page dedicated solely to the In-N-Out menu options. I’ve created a list that includes about two dozen different menu items designed to demonstrate the full breadth and breadth of custom options available at your typical In-N-Out location before you hop in the car.

Along with the listed single and double patties, you can add up to four patties to each sandwich. Ask for a three-by-three or four-by-four and you’ll get a triple cheeseburger or quadruple cheeseburger, respectively. They used to accommodate sandwiches larger than 4×4, but no longer do. I was pretty sure they could also accommodate a 2 x 4 or a 4 x 2 (that would be two patties, four slices of cheese, or four patties, two slices of cheese), but I hadn’t really tried it out in action on an unsuspecting one Cashier.
You can improve the flavor by asking for a mustard grilled burger. After the first side has cooked, the chef sprinkles some mustard on top of the patty before flipping it so it sizzles into the meat on the grill. It’s so good I’ve started making it myself at home.
However, there are those rare moments in life when you just want to enjoy the cheese. Order a grilled cheese and you get a soft toasted In-N-Out bun with two nicely melted slices of American cheese sandwiched between them. I like to eat these with cucumbers. You can even stack the usual slices of lettuce, tomato, and raw onion inside if you ask for it.

Of course, these aren’t your only vegetarian options. Grilled onions, simmered in the collected meat juices on the hot griddle, can be added to any sandwich and are standard when you ask for your burger or animal-style fries. An Animal-style burger also comes with an extra Thousand Island spread, grilled mustard patties, and extra pickles. Animal-style fries, on the other hand, are topped with cheese, spread and grilled onions. You should mix them up with your fork before the cheese starts to curdle (of course, you can ask for plain stale cheese fries, too). And these options are just the beginning.

With an order this large and complex, I figured the best strategy to achieve my goals without getting kicked out of the restaurant was to order in waves, always with a basic Anchor sandwich (let’s say a regular Double Double ) and a few of my “special” wishes. My first interaction with the beaming young cashier named Thomas was seamless.
“Welcome to In-N-Out.”
“Hello – I want to place a slightly strange order, ok?”
“Of course!” he said, almost a little too brightly. I have to remember to shed my suspicious New Yorker attitude.
“OK. I’d like a regular cheeseburger with all the trimmings. Then I’d like a regular cheeseburger with chopped chilies.* Oh, and could I have a bag of chilies with that, too?** After that I would have I need a cheeseburger with everything, cut in half, *** along with an order of fries, well done, **** if you can.”
“Sure we can! Anything else?” He is completely unimpressed.
“Uh yeah, I’ll have a Root Beer Float***** too, and… that’s it for now.”
“No problem. You will be number 4 today.”

Our order arrived a few minutes later, produced exactly as requested. Shocking! At my local McDonald’s, the cashier has trouble getting even a single cheeseburger right, let alone special requests!
After documenting the goods I went back for my second order.
“Hey – you’re back. Still hungry?”
“Yep. I’m going to order some more weird things.”
“So, are you just trying to order everything on the menu?”
Shit, I thought to myself. The gig is coming up.
“Yes…” I said embarrassed.
“Insanity! I’ve been waiting for this day since I started working here!”

Things just got a lot more fun. We continued to spend the next 15 minutes pondering our options, colluding like ’80s kids in a clubhouse, swapping garbage pail kids, and adding Thomas’ inside information to my original list.

Here’s something else: if you don’t like your onions chopped, opt for a whole grilled onion instead. Thomas loved this one, saying it was his favorite and describing the taste as “almost diner-like.” I have to agree It’s awesome.

Buns are toasted and burgers are medium by default. But you can of course request that your bun come either without toast or with extra toast, the latter of which will help protect it from excess burger juice. As for those chopped chilies, I’m no amateur when it comes to heat, but biting one of those tiny fire bombs in half almost brought me to tears. They are not for the faint of heart!
Those who want to blend the flavors of their condiments without burning their throats might simply want to ask for mustard or ketchup to be added instead. I was surprised to discover that you can refuse the delicious Thousand Island-style spread and opt for the more familiar red and yellow spritzers instead. Thomas assured me it was an unusual request. By the way, you can order 2 x 4’s or 4 x 2’s or even 1 x 4’s if you’re particularly fond of American cheese.
“Some people even like their cheese unmelted,” Thomas said with a touch of disapproval. If you’re that type, you can ask for cold cheese.

As we worked our way through the order, I noticed the couple next to me asking for a veggie burger. If for some reason you’ve decided to enter In-N-Out as a non-meat eater, don’t worry, this is a hippie town after all. You can forego all the meatiness for a simple salad in the bun. Also known as a wish burger (as in “I wish there was meat in this burger”), it’s a toasted bun piled high with hand-leaf lettuce, sliced tomatoes and of course onions, spread and pickles on request.
If you really love veggies and really hate carbs, you can also get your burger as a lettuce wrap by asking for it protein-style. Some headstrong people prefer to keep their roughage and meat in separate beds. If that describes you enough, you might want to order a side salad. Even Thomas admitted that few of the inner circle’s deepest In-N-Out staffers would comply with the request, but you can always hack your way there by requesting extra lettuce, tomatoes and onions on the side. It comes packaged in a double-double case. Ask for an extra packet of spreads and you’ll have a fully flavored daily supply of vegetables at no extra cost.
That should make you feel better about enjoying the meat and cheese feast known as the Flying Dutchman — the ultimate Atkins-friendly menu item. Two slices of cheese melted between two burger patties. No rabbit chow, no weak buns, just pure protein and fat. Would you like to increase masculinity by another factor? Ask for a Flying Dutchman Animal Style and they add a scoop of diced onions to the cheese. Pickles and spread will come on the side, so you’ll have to add them yourself. “I wish we could add the spread and pickles for you, but it’s just too messy for the chefs,” explained an apologetic Thomas. The result definitely wins the award for messiest menu item ever.
On the liquid side of things, you have your standard selection of chocolate, vanilla, and strawberry milkshakes (yes, they’ll accommodate a request for a black-and-white drink). Ask for a Neapolitan and you get all three flavors in one beautifully integrated and harmonious cup. Not into shakes? The words Root Beer Float bring you half a cup of root beer topped with a swirl of vanilla soft serve.

Everyone knows that In-N-Out’s fries are notoriously bad despite being freshly cut in-house — because they’re only fried once instead of the superior McDonald’s-style double fries — but there are ways to improve them. First, you can make them extra crunchy by saying well done. The fries come out drier and crispier than crispy with a fluffy center, but it’s a definite improvement. If you’re on the other end of the spectrum, you can also easily order your fries, where they arrive on your tray almost entirely blonde, limp and greasy. I do not know. Some people seem to like these. Thomas confirmed the rumors about even more extreme customers; A customer regularly ordered two-minute fries that were still crispy and raw in the middle.
Potential frying hack: Order a few trays of In-N-Out Fries Extra Light, bring them home, and then fry them yourself. If you let them rest on the way home, they should be in perfect shape to eat perfect double fried fries to get crispy when you bring them into your own kitchen, and bring you fresh double fried potatoes with the tedious slicing and initial frying jobs done for you.
And of course, if you want to jazz up your gear, all you have to do is ask for decals. You can get either the classic crossed In-N-Out palm trees on a white background or a 16 piece sticker puzzle featuring two boys hiding behind a car who are really, really naughty.
As we packed our order and he called, Thomas confided, “It was the coolest day I’ve ever had at work.” I agreed. It was a cool day and I thought I was done until I spied a customer doing this:

I was floored. Of all the strange wishes, was this the only one that couldn’t be fulfilled? Had our hand-in-hand adventure through the menus meant nothing to him? Was he just another corporate ploy bowing to the man? Was the whole deep, burger-fueled connection I sensed between our souls nothing but a lie, as fragile and hollow as a well-done roast? He must have seen the devastation on my face because he quickly continued, “But I’d like to order you a cheeseburger and fries and you can put them in your sandwich yourself. I’ll give you some extra napkins. And would you and your friends all like In-N-Out hats?”
Yes, Thomas, yes we would, I said quietly, dabbing at the onion-scented tears that suddenly welled up in the corners of my eyes with greasy fingers. It wasn’t from the chilies this time.
We left the place with good burgers and even better service and spent the next hour on the beach at Golden Gate Park, staring out at the ocean and contemplating how great the world would be if every fast food experience could be this uplifting.
