I’m no stranger to In-N-Out, the hugely popular Californian fast-food burger chain (which seems poised to expand east if only a few states are closer to me – hooray!). And of course I’ve known their secret menu for years. I’ve eaten many of their signature vegetarian, never-frozen, balanced creations with tangy sauce. I’ve even had them frozen and FedExed across the country to recreate at home (this particular experiment was a huge success, by the way). That said, last Sunday I was about to try something I’ve never done before.

The Location: An In-N-Out near Sausalito, north of San Francisco.

Time: Sunday afternoon, 3 p.m

The mission: order and document every single item and option in the menu: public, secret, super-duper-secret.

Anyone who’s been halfway around the block knows about In-N-Out’s secret menu, which gives you a few custom options other than the regular hamburger, cheeseburger, fries, shakes, and double-double that appear on their printed menus . But the options don’t stop there.

Before I ever set foot in the store, I scoured the internet and finally came across the Davis County Wiki, which has an entire user-generated page dedicated solely to the In-N-Out menu options. I’ve created a list that includes about two dozen different menu items designed to demonstrate the full breadth and breadth of custom options available at your typical In-N-Out location before you hop in the car.

Along with the listed single and double patties, you can add up to four patties to each sandwich. Ask for a three-by-three or four-by-four and you’ll get a triple cheeseburger or quadruple cheeseburger, respectively. They used to accommodate sandwiches larger than 4×4, but no longer do. I was pretty sure they could also accommodate a 2 x 4 or a 4 x 2 (that would be two patties, four slices of cheese, or four patties, two slices of cheese), but I hadn’t really tried it out in action on an unsuspecting one Cashier.

You can improve the flavor by asking for a mustard grilled burger. After the first side has cooked, the chef sprinkles some mustard on top of the patty before flipping it so it sizzles into the meat on the grill. It’s so good I’ve started making it myself at home.

Grilled onions, simmered in the collected meat juices on the hot griddle, can be added to any sandwich and are standard when you ask for your burger or animal-style fries. An Animal-style burger also comes with an extra Thousand Island spread, grilled mustard patties, and extra pickles. Animal-style fries, on the other hand, are topped with cheese, spread and grilled onions. You should mix them up with your fork before the cheese starts to curdle (of course, you can ask for plain stale cheese fries, too). And these options are just the beginning.

With an order this large and complex, I figured the best strategy to achieve my goals without getting kicked out of the restaurant was to order in waves, always with a basic Anchor sandwich (let’s say a regular Double Double ) and a few of my “special” wishes. My first interaction with the beaming young cashier named Thomas was seamless.

“Welcome to In-N-Out.”

“Hello – I want to place a slightly strange order, ok?”

“Of course!” he said, almost a little too brightly. I have to remember to shed my suspicious New Yorker attitude.

“OK. I’d like a regular cheeseburger with all the trimmings. Then I’d like a regular cheeseburger with chopped chilies.* Oh, and could I have a bag of chilies with that, too?** After that I would have I need a cheeseburger with everything, cut in half, *** along with an order of fries, well done, **** if you can.”

“Sure we can! Anything else?” He is completely unimpressed.

“Uh yeah, I’ll have a Root Beer Float***** too, and… that’s it for now.”

Our order arrived a few minutes later, produced exactly as requested. Shocking! At my local McDonald’s, the cashier has trouble getting even a single cheeseburger right, let alone special requests!

After documenting the goods I went back for my second order.

“Hey – you’re back. Still hungry?”

“Yep. I’m going to order some more weird things.”

“So, are you just trying to order everything on the menu?”

Shit, I thought to myself. The gig is coming up.

“Yes…” I said embarrassed.

“Insanity! I’ve been waiting for this day since I started working here!”

Things just got a lot more fun. We continued to spend the next 15 minutes pondering our options, colluding like ’80s kids in a clubhouse, swapping garbage pail kids, and adding Thomas’ inside information to my original list.

Here’s something else: if you don’t like your onions chopped, opt for a whole grilled onion instead. Thomas loved this one, saying it was his favorite and describing the taste as “almost diner-like.” I have to agree It’s awesome.

As for those chopped chilies, I’m no amateur when it comes to heat, but biting one of those tiny fire bombs in half almost brought me to tears. They are not for the faint of heart!

I was surprised to discover that you can refuse the delicious Thousand Island-style spread and opt for the more familiar red and yellow spritzers instead. Thomas assured me it was an unusual request. By the way, you can order 2 x 4’s or 4 x 2’s or even 1 x 4’s if you’re particularly fond of American cheese.

“Some people even like their cheese unmelted,” Thomas said with a touch of disapproval. If you’re that type, you can ask for cold cheese.

As we worked our way through the order, I noticed the couple next to me asking for a veggie burger. If for some reason you’ve decided to enter In-N-Out as a non-meat eater, don’t worry, this is a hippie town after all. You can forego all the meatiness for a simple salad in the bun. Also known as a wish burger (as in “I wish there was meat in this burger”), it’s a toasted bun piled high with hand-leaf lettuce, sliced ​​tomatoes and of course onions, spread and pickles on request.

If you really love veggies and really hate carbs, you can also get your burger as a lettuce wrap by asking for it protein-style. First, you can make them extra crunchy by saying well done. The fries come out drier and crispier than crispy with a fluffy center, but it’s a definite improvement. If you’re on the other end of the spectrum, you can also easily order your fries, where they arrive on your tray almost entirely blonde, limp and greasy. I do not know. He must have seen the devastation on my face because he quickly continued, “But I’d like to order you a cheeseburger and fries and you can put them in your sandwich yourself. I’ll give you some extra napkins. And would you and your friends all like In-N-Out hats?”

Yes, Thomas, yes we would, I said quietly, dabbing at the onion-scented tears that suddenly welled up in the corners of my eyes with greasy fingers. It wasn’t from the chilies this time.

We left the place with good burgers and even better service and spent the next hour on the beach at Golden Gate Park, staring out at the ocean and contemplating how great the world would be if every fast food experience could be this uplifting.
