So what is it about spicy food that causes such division? Like all foods, some love it and some hate it. And even among the spicy food lovers, some just need a squirt or two of Tabasco, while others head to their local grand piano weekly for their XXXX Mindkiller special.

For those of you in the latter group, like these guys, this list is for you. We’ve tracked down the absolute hottest hot sauces, ranked them by Scoville Units (the way hotness is measured) and given you the option to order them straight to your door. But beware: these sauces are hot (Scoville Units are measured by a complicated dilution process; for example, a capsicum whose extract must be diluted 10,000 times before capsaicin is undetectable has a Scoville Unit rating of 10,000.)

For a little perspective, let’s take a look at the flag-bearer of the hot sauce: Tabasco. The original version of the popular hot sauce has about 5,000 Scoville Units at most, about as many as you’d find in an average jalapeño. At the other end of the spectrum, Guinness World Records proclaims that the world’s hottest chilli is the Trinidad Scorpion “Butch T,” which hits a whopping 1,463,700 Scoville Units, almost 300 times hotter than a jalapeño.

For the chilli lovers out there, however, nothing is too hot, and hot sauce makers are finding more and more ways to pack as much capsaicin, the active ingredient in hot sauce, into their products. Just to give you an idea of ​​how hot hot sauces have gotten lately, the original super hot hot sauce, Dave’s Insanity Sauce, which hit the market about 20 years ago and started a hot sauce boom, is around 180,000 Scoville units – it didn’t even scratch the surface of our top 10 list!

Chicken chain Zaxby’s, 11791 S. Cleveland Ave., arrived in Southwest Florida, causing hoopla, revolving drive-through lines and overcrowded homes. The menu features chicken, chicken and more chicken.

Wings and (yum, delicious) Tender ($14.99 for 20, available in multiples of 5) come with a choice of 10 sauces ranging from teriyaki to tongue torch. The website Zaxbys.com even advertises a four-alert “taste bud attack” nicknamed “Insane.”

Armed with plenty of water, some carbs to keep the heat down, and a couple of fiery-loving palates, we put the tasty 10 to the test.

Zaxby’s Original sits on the edge of the tongue, an orange-red concoction reminiscent (in color only) of a good tomato soup from your favorite French town. Original serves as Zaxby’s version of Buffalo Sauce; taste the tingle of Tabasco, although the heat isn’t extreme. Safe for kids, grandma and pretty much everyone.

Honey Sesame is aimed at clucker lovers looking for a hearty alternative with a thicker sauce of floating sesame flakes. An initially sweet taste dissipates leaving an intense, overwhelming taste in the mouth. Our batch seemed heavy on the sesame oil. The solution is clearly to eat more chicken.

The luscious brown grill, thick and spicy with just a few afternotes of sweetness, delivers for people who prefer neither fire nor anything fancier. A bottle of this would knock any backyard grill up a few notches. The color reminds me of the time I left four packets of McDonald’s BBQ sauce in my coat and then washed it.

The teriyaki sauce looks and tastes like a backfire. Too thick for chicken, it sits in the takeout container like motor oil. Teriyaki coats the chicken with a strong soy sauce flavor; no notes of garlic or ginger come through. Make it easy on yourself or save for your next beef stir-fry.

The hot honey mustard looks like nacho cheese nestled in two tiny black shells. Do not be fooled. A lively note of pepper sits on the tongue and in the mouth, which is not interrupted by any honeyed sweetness. A razor sharp mustard flavor prevails; I would probably call that mustard honey.

A clear winner in the non-heat sweepstakes, Sweet & Spicy is reminiscent of a mild Thai chili sauce, although visually it resembles a thinner spaghetti sauce. The flavor comes from citrus, ginger, and red chillies, although you’ll definitely notice the peppers first. Sweet & Spicy brings together just the right combination of sugar and pepper to be effective but not overwhelming. You’ll want to put this sauce on everything; I’m still licking my lips and thinking about my next visit.

Four fiery options await intrepid guests. Order taker Mi’Tilya recommends a chocolate chip shake to help with the heat; Take our word (and yours). It is delicious.

The aptly named Wimpy offers a jockey wheel version of a Buffalo sauce. Catch some cayenne and a hint of Tabasco while setting this sauce up for anyone afraid of drinking copious amounts of beer to put out those mouthfires.

Tongue Torch won our informal office taste test among those who prefer their food with a tropical heat that’s not out of the oven. Distinct notes of vinegar spread in the mouth but do not overwhelm. Translation: It will clear your sinuses but won’t make you cry.

Nuclear and insane separate the weak from the strong. Nuclear has a garlic/pepper flavor while Insane seems to sit on the oregano/habanero border. Both will inflame your mouth, at least if you’re new to hot sauce. After a bite of Insane, I downed a bottle of Fijian water and breathed freely for the first time in weeks.

Finally, there’s the signature Zax sauce, available in condiment jars to go, just like McDonald’s. It tastes like the perfect mix of honey mustard and ketchup, although the label reveals three different instances of corn syrup, tomato paste, and Worcestershire sauce. Neither too spicy nor too sweet, it tastes like baseball games, barbecues and picnics.

DON’T FORGET THE PAGES

Fried Pickles: We haven’t tried them. Either you’re a fan of fried pickles or you’re not.

Tater Chips: A bunch of damn tasty (and crunchy) homemade potato chips served with ranch, if that’s your thing. Eat them while they’re still warm.

Fried Mushrooms: Unfortunately, the sliced ​​mushrooms tend to absorb oil. Chewing these feels like eating battered fat.

White Cheddar Bites: The best choice, available in two sizes ($1.99/$3.49). Who doesn’t love fried cheese? Crispy, gooey, delicious, so perfect you won’t even open the marinara.
