In Australia we use the metric system, i. H. we love our milliliters (mL), liters (L), kilograms (kg), grams (g) as well as measuring cups, tablespoons and teaspoons.
However, American recipes often call for measures of volume (e.g. ounces and pounds) so conversion to grams is required.

Baking 101 – Baking Measurements
I asked my followers on social media how they fill cups. The majority scoop ingredients like flour or sugar from the bag and then level the top. So that’s the approach I took when measuring similar ingredients for my calculator. I also like to squeeze the bag beforehand to break up any lumps.
Many conversion tables give 1 cup of flour as 120g. However, I have found that the only way I can get it that low is to sift the flour and then use a spoon to fill the cup with the sifted flour. I don’t know about you, but I prefer to sift flour after it’s been measured, not before. So in my calculations you will find that a cup of flour weighs more as it reflects how I fill a cup.
I fill ingredients in smaller packets directly from the bag into the cup and level the top.
For soft ingredients like butter or cream cheese, I press them into the cup with the back of a spoon to make sure any gaps are filled, then level the top.

Grams to Cups Conversions and vice versa
If, like me, you love to search the internet for new recipes, there are times when you come across different methods of measurement than you are used to.
So I made a little table that can help you convert grams to ounces and cups and vice versa.
1 ounce equals 28.35 grams, although 1 cup cannot be converted using a formula as different ingredients weigh differently. This means that 100 grams of flour and 100 grams of sugar are not the same in cups. However, I have made a few different charts of the most commonly used ingredients.

The most commonly used cup volume is the US standard 236.59 ml cup. If you have a recipe from the US, you can be pretty sure that’s what the authors intended. In the US there is another type of cup called a legal cup. It is used in nutrition labeling and measures 240ml.
Other countries occasionally use cup units and the recipes usually weigh non-liquid ingredients in grams rather than measuring volume. The British Imperial mug was used in recipes prior to 1970. In Great Britain, Australia, New Zealand, Canada and South Africa the metric cup (250 ml) is sometimes still used.

Baking 101 – Baking Measurements

Sometimes when I’m not sure about a recipe but still want to try it, I scale the recipe down to 50% of the original. In these circumstances, I found it very difficult to calculate 50% of 3/4 cup, or measure 50% of 1.5 tablespoons, etc. Then I found this handy chart in my Baking For Dummies book. For example, 3/4 of a cup equals 12 tablespoons, so half of that would be 6 tablespoons.
