There’s no need to buy preformed patties or invest in any sort of burger mold gizmo or press when you’re craving a burger. Just learn how to make burger patties with your own two hands, some ground beef and some salt. It’s so easy for your kids to do – just make sure they wash their hands before and after.
You can make a burger patty with any type or mix of ground beef(s). Ground beef, lamb, pork, veal, bison, duck, chicken, and turkey make great burgers. And if you want ground beef, it doesn’t have to be just ground beef — you can grind any cut of beef you want (or have your butcher grind it for you), or mix that beef with ground pork or even mushrooms for a greener option. How to make a classic burger patty
1. Divide the ground beef into even balls
The amount of ground beef you want in each serving is entirely up to you. Classic burgers typically range in size from a quarter pound (4 ounces) to 6 ounces. So you pick, then divide your ground beef into even portions (use a kitchen scale if you want it really accurate!) and shape into loose balls. Don’t pack these balls too tightly though – it will make your burgers chewy. Pack them just enough to hold together.
2. Flatten these balls into patties
Once your meat is evenly divided into equal-sized balls, you can lightly flatten them gently with the palm of your hand into 4-inch wide, 3/4-inch thick, loosely packed patties.
3. Make a well in the center of the patty
Now use your thumb to make a small indentation in the center of each patty. The patty will shrink as it cooks, and this trick will help ensure it stays flat as it cooks.
4. Season on both sides and cook to taste
Season each side of the patty with salt and pepper (or just salt, whichever you prefer), then cook however you like: on the grill or on a griddle or skillet.

How to make a smashed burger patty
1. Divide beef into equal portions
Smashed burgers are thinner than classic burgers, so stick to a quarter pound of meat per serving. So portion out 4-ounce servings of whatever meat you use.
2. Form pucks
Once your meat is divided into even portions, form each portion into a “puck” about 2 1/2 inches thick, being careful not to pack too tightly.
3. Freeze briefly
To ensure you get juicy meat on the inside and a nice crispy rim on the outside of a smash burger, it helps to freeze the meat pucks for 15 minutes before cooking. Don’t freeze them any longer though – you don’t want them actually frozen, just nice and chilled but still fragile.

How to make a stuffed burger patty
1. Divide beef into even balls
