While the chocolate topping is the most traditional and classic version, other Moon Pie flavors include salted caramel, banana, vanilla, strawberry, and more.

This sweet treat is not to be confused with mooncakes, a traditional Chinese baked product typically made during the Mid-Autumn Festival.

Chattanooga Bakery, Inc. invented and still produces the American moon pie snack. The company still manufactures its products in Chattanooga, TN.

Moon Pie Story:

As mentioned above, moon pies are an invention from the southern United States. Chattanooga Bakery Inc. has been making these sweet treats since April 29, 1917. Apparently, the moon pie was invented when Earl Thach Shauf and his father, Mitchell Poe Shauf, met a Kentucky miner. At that time, they asked him what he would like to eat as a snack. In response, the miner asked for a graham cracker and marshmallow treat.

A popular story, often repeated by Chattanooga Bakery, is that the miner asked for it to be “as big as the moon.” That’s why Chattanooga Bakery named their product Moon Pie!

The treat became so popular with children and adults alike that the company changed its name from “Tongyang” to “Orion.”

Two Korean companies, Orion and Lotte, have been fighting over the rights to Choco Pies for many years. While Orion was developing the product and brand, a few years later Lotte started producing the same product with the same name. The courts ruled in favor of Lotte, declaring that the name was a generic trademark since Orion did not apply for a trademark license until much later.

Every year, Orion releases a limited edition spring strain. Examples are Strawberry Jam in 2017, Pistachios and Berries in 2019, and Strawberry Blossom in 2020.

In North Korea, workers at the Kaesong industrial complex received choco pies instead of cash bonuses before the complex closed in 2013. Variations on the original date back to 1917 in the southern United States. In 1929, Chattanooga Bakery created the moon pie with marshmallow filling and graham crackers for local miners in Chattanooga, Tennessee.[3]

In 1961, a Japanese confectionery company, Morinaga & Company, began selling Enzeru Pie (エンゼルパイ, Angel Pie), which was modeled after Scooter Pie, a version of Moon Pie.[4]

In 1973, a member of the research and development team at the Korean company Tongyang Confectionery visited a hotel in Georgia, USA, and was inspired by the chocolate-covered candies available at the hotel’s restaurant. He returned to South Korea and began experimenting with a chocolate sponge cake, creating what the Koreans call “chocolate cake.”[5] The name “Choco Pie” became popular when Tongyang first launched the Orion Choco Pie and was well received by Korean children and the elderly due to its affordable price and white marshmallow filling. Tongyang Confectionery later renamed the company to Orion Confectionery thanks to the success of the Orion Choco Pie brand.

PNB, a bakery company founded in 1951 in Jeonju, South Korea, is famous for its traditional choco pie confectionery. This earlier timeline points to an earlier existence of a variation of the treat in Korean history. There is a historical connection associated with this as this bakery is only widely available near the traditional Hanok villages of Jeonju.[6]

In 1979, Lotte Confectionery began selling a similar confection. When Lotte Confectionery launched the Lotte Choco Pie, they decided to spell the prefix in Hangul a little differently than Tongyang spelled it. Tongyang used “쵸” (“Chyo”), while Lotte started using “초” (“Cho”). Haitai and Crown Confectionery also began selling their own versions of Choco Pies. Lotte also began selling as Choco Pie in Japan in 1983.

In 1999, after many years of selling various “choco pie” products, Tongyang (Orion) filed a lawsuit against Lotte for using the term “choco pie”, claiming the name was her intellectual property. However, the court ruled that Tongyang was responsible for its brand name becoming generic over time and that the term “chocolate cake” should be considered a common noun due to its generic descriptive sense in relation to confectionery of similar composition.[7 ]

In 2016, Orion launched a banana-flavored choco pie to celebrate its 60th anniversary. It’s the first variation on the original product in 42 years, since the company released the Choco Pie with Marshmallow Cream in 1974.[8]

In 2017, Orion launched its premium chocolate cake brand, Choco Pie House.[9]

In 2020, Orion Chal (meaning “chewy” in Korean) released Choco Pie to celebrate Choco Pie’s 45th anniversary. Chal Choco Pie has 2 flavors of Inseolmi and Black Sesame Rice Cake.[10] Due to the launch of the product line, total Choco Pie sales increased approximately 20% in January and February compared to the same period last year.[11]

Orion has launched a seasonally limited spring edition of Choco Pie since 2017. In 2017, Orion launched Choco Pie Strawberry, which features strawberry jam in a marshmallow.[12] In 2019, Orion launched a new edition with pistachio and berry flavors. In 2020, it launched Choco Pie Strawberry Blossom. It is coated in pink chocolate instead of the usual dark brown color. A total of over 5 million cakes have been sold 3 weeks after launch.[13]

In January 2021, Orion launched its first limited winter edition, Choco Pie Chung Happy Berry Chocolate, 46 years after its founding. Reimagining the chocolate cake as a holiday end-of-year cake concept, the product features a chocolate cake filled with chocolate berry syrup and marshmallow.[14]

Choco Pie entered the Russian market in the Far East region after the fall of the Soviet Union in the early 1990s and quickly became popular among the Russian population, children and adults alike. Beginning in the 2000s, Orion began using choco pie to gain a foothold in overseas markets and now controls a two-thirds share of the Chinese snack food market, with one-third of Orion’s 2006 revenues coming from outside Korea.[15] Around 12.1 billion Choco Pies have been sold worldwide.[16]

Orion has interests in five main markets – South Korea, Russia, Vietnam and China, and Canada. In 2016, Choco Pie, which sold 600 million packs in Russia, is dubbed the “National Pie.”[17] Vietnam also consumed 600 million packs in 2018.[18] The snack was also particularly successful in India, Pakistan and Taiwan.

North Korea[ edit ]

Chocolate cake exports to North Korea were very popular, with North Korean workers at the Kaeseong Industrial Complex in North Korea receiving chocolate cakes instead of cash rewards, which were seen as too capitalist.[19][20] Before the complex’s closure during the 2013 Korean crisis, workers received chocolate cakes in addition to their wages, which had become a popular snack in Kaeseong (개성시) and also a symbol of capitalism.[21] However, workers in Kaeseong (개성시) often resold their cakes on the black market. In 2010, The Chosun Ilbo reported that chocolate cakes could fetch as much as $9.50 on the North Korean black market.[23] Between 2008 and 2014, Lotte Corporation estimated that it shipped 1.2 million boxes of Choco Pie to North Korea.[24]

The North Korean government temporarily closed the Kaeseong (개성시) complex in 2013 amid tensions surrounding the nuclear tests.[25] This reduced the supply of chocolate cake and drove up the price even further in North Korea.[26] When the complex resumed operations after a five-month hiatus, employers were banned from paying bonuses for chocolate cake and were advised to give bonuses in the form of “sausages, pasta, coffee, and chocolate” instead.[27][ 28] North Korea also reacted to the chocolate cake speculation by producing its own version of the snack.[29]

The first would be your RMR, or Resting Metabolic Rate, the number of calories your body burns at rest.

Essentially, imagine if you just lay in bed all day and didn’t move at all, your body still needs to keep your internal bodily functions active so you’re still burning calories!

Everyone’s resting metabolic heart rate is different, but the good news is that it can be changed.

This goes back to why eating protein is so important to building and maintaining muscle.

The more muscle you have in your body, the higher your resting metabolic heart rate will be.

Next you would add your TEF, or the thermic effect of food, which is how many calories you burn while eating, which includes the entire process of chewing, biting, swallowing, ingesting, and all the other actions involved in digesting the food.

Finally add your daily activity or movement throughout the day or any exercise.

This is why exercise is so important, and we’ll talk more about it in the section below!

It seems very complicated, but the good news is that your TDEE can be calculated by simply entering it into one of the online calculators that use your gender, height and weight to calculate your TDEE.

Keep in mind that everyone’s TDEE is different, so the number you get from the calculator is a good starting point, but you may need to make adjustments here and there.

If you’re trying to lose weight, first make sure you’re eating fewer calories than your TDEE, but don’t cut back too drastically too quickly, as this could make your diet difficult and unsustainable.

I recommend starting out by cutting back about 300-400 calories for moderate weight loss, but it varies from person to person so see what works best for you!

After cutting about 300-400 calories, track your weight to check your progress.

If you see absolutely no results after a week or two, try subtracting your calories by 100-200 more until you start seeing some changes in your weight.

Remember that weight isn’t everything and it can vary depending on how much water you have, what time of day you eat, when you weigh yourself, and several other factors.

The most important thing to remember is to stay consistent in your weight loss journey and be extremely patient.

What you will realize is that your diet should be sustainable and an enjoyable process.

Taking care of your health will teach you some good habits and force you to make informed and mindful food choices.

If you’re looking for a fun, squishy and delicious chocolate covered dessert, you’ve come to the right place. This is a homemade version of the famous Korean snack, choco pie, but better. We have a fluffy marshmallow with vanilla beans sandwiched between a soft cake and covered in dark chocolate.

When developing this recipe, I found that there is a similar snack in America called moon pie. Similar to the choco pie, it has a marshmallow filling but sandwiched between two graham crackers. I’ve never had one, but it’s not hard to imagine such a classic combination of flavors!

And then, if you look further in (or my childhood, for that matter), Australia has a similar snack called the Wagon Wheel. Two biscuits surrounded by a marshmallow jam filling covered with chocolate. A little upgrade with the jam but just as delicious.

Either way, moon cake, wagon wheel or chocolate cake, you can’t compare them to a homemade version!

Improvements over the original chocolate cake

Choco Pies were a regular in my snack cupboard, with that chocolatey outside and mushy marshmallow inside. But they were never a favorite. Something about the cake/cookie in the chocolate cake was dry, crumbly and tasted a little sad. But it ended up being a chocolate snack, so who’s complaining?!

Now I have the freedom to do better.

The cake

Like I said, I wasn’t a fan of dry cookies/cakes. To be honest, I’m not sure if it’s a cake or a cookie. It wasn’t soft and fluffy enough to be a cake, but it wasn’t crispy enough to be a cookie… So the first big upgrade is the cake crust. I wanted to make it light and fluffy so it complemented the squishy marshmallow interior.

The marshmallow

There was nothing wrong with the marshmallow, but adding some vanilla bean paste only enhances that flavor profile! If you don’t have vanilla bean paste, feel free to use vanilla extract!

The chocolate

The chocolate that covers the cake isn’t terrible, but it’s not the best chocolate. A high-quality chocolate bar to cover the marshmallow cake makes all the difference. And a bit of salt flakes on top? 🤤🤤

Tips for the perfect chocolate cake

The individual components that make up the chocolate cake are not difficult to make, but assembling the cake itself can be a bit tricky. Here are a few tips for making an identical looking but better tasting chocolate cake!

Pipe the cake batter

The cake batter should not be so thick that it stands up like a high mound, but not so thin that it spreads across the baking sheet. Somewhere in the middle!

When squirting the cake batter into circles, be sure to leave enough space between the rounds so they don’t touch as they expand in the oven.

The marshmallow filling

In this recipe, we’re essentially making marshmallow fluff. When preparing marshmallows, timing and temperature are the two most important things. The formation of the meringue depends on the temperature of the sugar syrup when it’s added to the egg white, so it’s important to keep a close eye on the temperature of the sugar.

How to ensure success in making Marshmallow Fluff:

Make sure you have all the ingredients ready so you can add them straight in at the right temperature

So if the temperature is right, you can add it directly. Make sure the egg whites are at least soft before adding the simple syrup

A small, slightly deep dipping vessel. When choosing your bowl, make sure it’s not too big to allow the chocolate to form a small pool. There should be some depth, but not so much that you have a hard time fishing out the chocolate cake

Add Vegetable Oil Adding vegetable oil will thin the chocolate, making it a little easier to dip

Use a fork. Once the choco pie is dipped in the chocolate, fish it out with a fork. This allows excess chocolate to drip back into the bowl through the crevices in the fork. Tapping the rim of the bowl with a fork a few times will remove the excess chocolate and coat your chocolate cake evenly.

Dark chocolate ( ) 2 tsp vegetable oil Instructions Preheat the oven to 350°F and line 2 baking sheets with parchment paper. Heat the milk in a small saucepan until steaming. Meanwhile, in a medium-sized bowl, whisk together the egg yolks, oil, and sugar (I ) Pour the hot milk slowly into the egg yolk mixture give and whisk.
