Step one: Decide on your alcohol

Each type of alcohol has different properties and therefore imparts a special flavor to your meat when used as a marinade. Don’t just pick a bottle of liquor at random, think about the results you want to achieve beforehand.

For example, marinating your meat in whiskey gives it a smoky flavor that’s ideal for grilling, but also for mimicking the taste of the grill in your indoor kitchen. Rum, on the other hand, adds a sweetness that’s great for grilling pork and white meats.

Step Two: Tenderize your meat

You should anyway, especially when it comes to steaks. Pounding your meat with a meat tenderizer will not only make it more tender, it will also absorb more flavor from your marinade. It’s cyclical too – your alcohol marinade will repay the extra work by tenderizing your meat even more.

Step Three: Marinating Length

A common mistake many home cooks make is to marinate their meat for too long—often overnight. The problem is that alcohol will eventually start chemically “cooking” your food. (The same thing happens with acid- and salt-based marinades.)

Boned top sirloin and sirloin tip steaks are very similar but slightly different. What is the difference? Well, they’re both boneless, despite their names. The top roast beef comes from the roast beef and is more tender. The roast beef tip, on the other hand, comes from the round and is somewhat tougher and slimmer in its marbling.

Additionally, there is a rib of fat that runs along the top of the boneless top sirloin steak. While you may not enjoy eating fat straight away (or maybe you do!), it adds more flavor and nutrients as it breaks down and cooks into the steak. The Sirloin Tip Steak has no fat back.

Both cuts lend themselves well to a marinade and, when prepared correctly, make a nice, tender cut. Top roast beef is a little better for grilling because it’s inherently more tender than the roast beef top. As always, don’t overcook these steaks! The longer you cook them, the less tender they will become. The recommended cooking temperature is 145 degrees. We highly recommend using a meat thermometer to make sure you don’t overcook them! Meat will still cook after you take it out of the pan for a few minutes and will still rise a few degrees in temperature.

Top Sirloin vs. Sirloin Tip Steak

(Anastasia) Hi everyone, this is Anastasia from Riemer Family Farm, I’m making some lunch and just wanted to share something with you guys.

So these are sirloin steaks, we have two different ones here, this is a top sirloin, we call it a boneless sirloin. It has this rib of fat along the top and it has this nice marbling in between. And this is a sirloin tip steak, and it doesn’t have that back of fat, but it also has a nice marbling here. So both of these steaks are from the sirloin, it’s a leaner cut of beef so we marinated them overnight, just a little oil and vinegar, some garlic salt and pepper to give it a little more flavor and tenderness. We throw them in a pan here and sear them on both sides. We don’t want to overcook them, so we cook them to about medium, medium-well. And that’s about 145 degrees (F) minimum for beef. If you can refer to our Temperature Cooking Chart, you will find it there. We’re going to slice them up and toss them on a salad and call it lunch. It’s a nice hot summer day so this will be a nice, cool, comfortable lunch.

I wish you could smell this, it’s so good. We used balsamic vinegar and it tastes really good. As I lifted the steaks out of the pan they started falling apart, making them nice and tender.

We just cut up these two steaks, the sirloin we overcooked a bit but the top sirloin is very well cooked. Some nice pink in there, that’s what we like to see. So, I just wanted to point out that if you’re not a fan of fat, having that extra crest of fat on top [on the top sirloin] makes it a little bit juicier, gives it a little more fat to break down than you cook and somehow incorporate into the meat. This is going to be really tender, it was really nice to cut apart. But if you’re a little squeamish about fat, it’s really easy to trim off the fat since that ridge is right at the top once the steak is cooked and done. Go ahead and just cut that off. If you don’t want to eat this, give it to your dog or someone who wants to eat it. It’s really easy and adds a lot of flavor and nutrition to the steaks. Because our beef is grass-fed, it’s packed with delicious omega-3 fatty acids that are good for your brain and heart. So don’t be afraid of fat, fat is good.
