Homemade no-churn ice cream is one of the easiest treats you can make, and you know it’s best for the summer season. It’s mango season too, so I made ice cream with mangoes in it. And my friends, if you love mangoes, you know this Mango Graham Ice Cream would be one of your favorite flavors.

It took me a while to make my second attempt at making ice cream without churn. The first was a brownie ice cream cone, but I found it very heavy on cream (duh! heavy cream, yeah?), so I’m still revising the recipe and trying to tone down the heavy cream flavor. Ha! Good luck with it!

From the name itself you know it contains mangoes and graham crackers. This combination is very common in the Philippines as it is used in a famous dessert called Mango Float. This Mango Graham Ice Cream is made with just four ingredients – whipped cream, condensed milk, mangoes and graham crackers. I see other recipes using mango condensed milk (I didn’t have access to that) and yellow food coloring. Also, I don’t know what I’ll think of mango-flavored condensed milk. I think I prefer to use the mango puree and condensed milk combo. who is with me??
Ahhh… everything was perfect – the texture, the taste, the creaminess of the ice cream. Nice that there are chopped mangoes – something to bite into. I just had to justify the size of the roughly chopped graham. You know, I’m not really a patient person. 😛 Well, the graham crackers will soften when mixed with the liquid ingredients, so it doesn’t matter, yes?

Prep Time 15 minutes Freeze Time 8 hours Total Time 8 hours 15 minutes Servings 4 Author Jhuls @ The Not So Creative Cook Ingredients 500ml (2 cups) heavy cream chilled
1 14-ounce can condensed milk chilled
1 cup chopped mangoes for puree
1 cup chopped mangoes for mixing and use as toppings
9 graham cracker sheets, roughly broken Instructions Before preparing ice cream, make sure bowl, whisk, container, milk, whipping cream, and mangoes are cold. Place 1 cup chopped mangoes in a blender. Blitz until mangoes are mashed. Pour into a bowl and add condensed milk. Store in the refrigerator until ready to use. Pour cream into a bowl. Beat until stiff peaks form. Gently fold the mango puree and condensed milk mixture (in thirds) into the whipped cream. Add ¾ of the chopped mangoes and graham crackers (leave some for garnish) and mix. Transfer to a container, cover with cling film and freeze overnight or until set.
