With a history as long and complex as the country itself, Jamaican rum stands out from rums made in other Caribbean countries thanks to its unique fermentation process, broad product range and distinct ‘funk’.

Jamaican rums are fermented in one of two ways for Distiller, according to Matt Strickland. The first is wild fermentation, where airborne loose yeast lands on open vats with pre-rum and ferments for weeks. The other is to add dunder, the leftover fermented liquid from previously distilled rum, to fermenting rum. Both methods produce loads of fruity and funky flavors that are unmistakably Jamaican.

Today there are only about seven distilleries across Jamaica that produce a range of rum brands. The most common rums made in Jamaica include white rum, golden rum, aged rum, and overproof rum, which must be 126 proof or higher.

The History of Jamaican Rum

To make rum you need sugar, which was introduced to Jamaica in 1494 by Christopher Columbus, who transported it from the Canary Islands. When the British took over Jamaica in 1655, they brought with them an in-depth knowledge of making and distilling rum from Barbados. In Jamaica, they were able to refine the process and expand trade, and the rum industry boomed, in large part due to the role slaves played in its manufacture.

“Slaves are the godfathers of the rum business and have kept it alive,” says KK Hall, global brand director of rums for Campari Group, which imports Jamaica’s Appleton Estate rum. “When the anti-slavery sentiment started and slavery was finally abolished [in Jamaica] in the 1830s, it really impacted rum, because slaves were the people who were really behind the making of rum.”

The strength of the anti-slavery movement and the war between Britain and France led to a massive decline in rum production in Jamaica in the late 19th century. In 1893 there were about 148 rum distilleries across the island. By 1948, that number had dwindled dramatically to 25. Today only four distilleries remain in operation in Jamaica: Hampden Estate, Appleton Estate, Worthy Park Estate and National Rums of Jamaica. But the quantity of rums produced has grown, as has the variety; Jamaica produces enough alcohol to fill 20 Olympic-size swimming pools each year, it is said, and it’s sold in over 70 countries around the world.

What Makes Jamaican Rum Unique?

Jamaican rum considered full-bodied is molasses fermented in large vats called “puncheons” and distilled in pot stills, a practice dating back to the 17th century. Full-bodied rums rely on natural or so-called “wild” fermentation to give them a distinct flavor.

“Loved for centuries, the famous ‘Jamaican Funk’ exudes tropical fruit, wood, gum, smoke, spices and sweet caramel and molasses, perfect for mixing, punch and cocktails,” says Global Rum Ambassador Ian Burrell. “Jamaican rums are also inherently sweet as it is illegal to add sugar to Jamaican rums.”

Also unique to Jamaican rum is the island’s limestone, a mineral-rich sedimentary rock enriched with calcium carbonate.

“Jamaica is an ideal environment for growing sugar cane. It comes from so-called limestone water, which is also needed for Jamaican rum and Appleton Estate rum, which makes the end product smoother and a little bit sweeter,” says Hall.

Aside from molasses and limestone water, there are other qualities that define Jamaican rum: it’s made with all-natural, non-GMO yeast; it is aged in oak barrels; and no sugar or artificial flavors are added at any point in the process. When flavor is added, as in the case of coconut rum, it is labeled “Flavored Rum” on the bottle, and the coconut flavor is all natural.

“With the molasses and the limestone-filtered water, you have these raw materials that are put through a process that we monitor very, very closely,” says Hall. “Just like the making of a fine wine or a single malt Scotch, it’s done by hand throughout the process in a very careful and very quality-focused way.”

The final steps involve blending the rums and then aging them, some for many decades.
