Why I love this recipe
I didn’t have a shake and bake so I made my own brew which tastes better 🙂
ingredients you need
1 rabbit 1/2’d or 1/4rd (you will need about 1/2 rabbit per person)
Whole milk for soaking (I use organic grass fed or original flavored almond milk)
About 2 1/2 C panko breadcrumbs plain
About 1 cup all-purpose flour
About 1 heaping teaspoon of Lawry’s Seasoned Salt
About 1-2 teaspoons of sugar
About 1 tsp garlic powder
About 1 tsp parsley
About 1 tsp chopped onion
3-4 tbsp vegetable oil

Instructions Place the rabbit in a large bowl and cover with milk. Soak overnight. Remove the rabbit from the milk and place on a plate or baking sheet to air dry while the breading is prepared. (Give milk as a treat to pets) Place breadcrumbs, flour, seasoning salt, sugar, garlic powder, parsley, onion and oil in food processor. Mix well. Grease the baking pan generously and set the oven to 350F. Beat eggs and dip the rabbit in the egg. Use your hand to make sure the whole piece is covered. Then place the dipped piece in the breading, making sure the whole piece is coated in the breading mixture. Then place each piece in the oven pan and bake in the 350F oven until cooked through
