Mix the butter, corn syrup and chocolate, melt. Cool. In the mixing bowl, beat the eggs, sugar, vanilla and salt until fluffy. Mix well. Stir in the chocolate mixture. Pour into pie shell. Bake at 325 degrees 15 min. Reduce heat to 275 degrees and bake 40-45 minutes longer, until set. Cool. Serve with ice cream or whipped cream and sprinkle with grated chocolate if you like.
Aunt Catfish’s Boatsinker Pie
I made Aunt Catfish’s Boatsinker Pie for National Pi Day. Although I’ve had this recipe in my recipe box for many years, this is the first time I’ve ever made it.
Way back in the 1980’s (ha!) a group of friends including myself went to Patti’s 1880’s settlement in Grand Rivers, Kentucky for lunch. This was the first time I ate there. I remember exactly what I had: A hot brown and homemade potato chips. For dessert I had Aunt Catfish’s Boatsinker Pie!
They also baked their homemade bread in clay flower pots and served it with strawberry butter!
The day we were there they gave out cake recipes at the door! ! I have three of her pie recipes: the pie featured here, John Y. Brown Pie, and Patti’s Sawdust Pie.
I changed my dessert a bit. The original recipe calls for ice cream, and I couldn’t find any ice cream in our Kroger store; So I went with Black Raspberry Ice Cream instead. It was really perfect!!
I used a store-bought pie crust for my cake, but if you prefer homemade pie crust, you should definitely do it. This cake is very simple. The filling is chocolate, dark Karo syrup and butter mixed in a bowl of simmering water. Sugar, eggs, vanilla and salt are stirred in once the chocolate mixture has cooled.
Turn into a pie pan and bake. So delicious and worth it!!
Fast forward to this late summer 2020 another group of friends. . . My husband and I included. . . took a golf trip to Ledbetter, Kentucky; and we went to Patti’s for a late lunch. So much fun!!
